Summer is winding down, but one of the big grilling holidays is still to come: Labor Day! Do you have a cookout or other party planned for the holiday weekend? I definitely plan to put my (bare) feet up and enjoy some casual food and drinks with my family and friends. I am anything but fancy, so burgers, hot dogs, and this easy going Barefoot Refresh are just my style!

What’s Barefoot Refresh you ask? Well, it’s a tasty, light-bodied spritzer that is perfect for summer sipping. It’s a little sweet, a little fizzy , and lower in alcohol than regular wine. These burgers are another way to keep enjoying what Summer has to offer since they are loaded with zucchini and yellow squash that are plentiful this time of year. I should have kept this recipe’s name more of a mystery because you kind of know what to expect, right? Turkey burgers with squash and parmesan. True, but you don’t know how good they are! Not only does the squash add fiber and vitamins, it makes the burgers so moist!

I really pulled a fast one with these veggie-loaded burgers. My husband couldn’t figure out why I said he was getting extra vegetables with his dinner. One guest ate half of his burger before he had a moment of panic and said, “There’s something yellow in here!” I told him it was just seasoning. He questioned me a bit, saying he had never seen a seasoning that was yellow before, but then he let it go and happily ate the rest of his squash burger. I felt like a super chef!

  • 1.25 pounds ground turkey
  • 1 yellow squash grated
  • 1 zucchini grated
  • 1 egg
  • 1/2 cup shredded parmesan cheese
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon garlic powder
  • 1 teasoon onion powder
  • freshly ground black pepper to taste
Prep Time 15 minutes
Cook Time 15 minutes

Instructions
  1. Stir all ingredients together until well combined.
  2. Divide and shape meat into 5-6 patties.
  3. Cook on a hot grill or skillet sprayed with cooking spray for approximately seven minutes per side or until juices run clear.
  4. Serve with desired condiments, and enjoy!

    Hi,
    Looks delish! I’m assuming the zucchini is grated raw of course – does it get fully cooked or is it crunchy – before I invest!

      Hi, Leezee! Sorry I missed this until now. The zucchini wasn’t crunchy at all. It was really hard to even notice it was there! I told my husband I was sneaking him extra vegetables, and he couldn’t figure out what I meant :)
