I love tacos! I think you do too because I asked once on Facebook what everyone’s favorite easy dinner was, and tacos were one of the most popular answers. They are fun to assemble and even more fun to eat, especially with these cute taco boats. Today I made you these slow cooker chicken tacos that I just know you’ll enjoy. The chicken is cooked with beer, tomatoes, and spices to make it moist and flavorful, and the tacos are topped with seasoned yogurt to add a little extra somethin’ somethin’.

These slow cooker chicken tacos only take about five minutes to get started in your crockpot, and they will make your house smell incredible all day! Head on over to your local Walmart to pick up a can of Budweiserยฎ (or Bud Light), Old El Pasoโ„ข Stand ‘N Stuff Taco Boats, and a tub of Yoplaitยฎ plain yogurt. You should be able to find all the other ingredients there too.

Thanks to using bone-in chicken, the meat in this recipe stays really moist during cooking. Removing the skin and bones only takes a couple extra minutes before shredding the meat, and it’s totally worth it! If you have leftovers of this beer stewed chicken, you could do just about anything with it. Use it in Mexican Chicken Soup, make Taco Dip, or just have tacos again the next day.

Slow Cooker Chicken Tacos

Ingredients

Scale
  • 12 ounces Budweiserยฎ regular or light beer
  • 15 ounces canned diced tomatoes with green chilis drained
  • 1 packet taco seasoning divided
  • 4 bone-in chicken breasts with skin
  • 1 package Old El Pasoยฎ Stand ‘N Stuff soft flour tortillas
  • 1 cup Yoplaitยฎ plain yogurt
  • finely shredded cabbage
  • 2 avocados sliced

Instructions

  1. Pour beer, drained tomatoes, and about 3/4 of taco seasoning mix into slow cooker. (Set aside remaining taco seasoning for next step.) Add chicken pieces skin-side down in slow cooker, and spoon beer mixture over the chicken. Cook on low 6-8 hours.
  2. Stir together yogurt and remaining taco seasoning. Cover mixture with a lid or plastic wrap, and store in refrigerator until ready to serve.
  3. When cook time is done, remove chicken, and turn off slow cooker. Carefully pull off skin, and pull bones out of meat. Shred remaining meat with two forks, checking for any remaining bones as you shred. Place shredded meat in a serving bowl, and use a slotted spoon to scoop tomatoes out of cooking liquid and mix with chicken if desired. Now the chicken is ready to serve.
  4. Set up a taco bar with taco shells, meat, shredded cabbage, seasoned yogurt, avocado slices, and any other toppings you would like. Arrange filling in your tacos as desired, and enjoy!
