Dig into this lightened up Kale Artichoke Dip for your next girls’ night, football game, or holiday party! I can’t wait to show you the recipe, but first I really want to tell you a completely unrelated story intermixed with photos of this easy, creamy dip so we remember what we’re doing here.

This Kale Artichoke Dip lightened up with reduced-fat ingredients is perfect for entertaining!

I had my first ever massage yesterday. I have been given massage gift certificates multiple times over the years, and I was always too shy, nervous, or busy to use them. I either regifted them, or they are still in a drawer somewhere. (I’m sorry, gift givers!)

It’s hard to carve out an hour plus travel time to go do something so indulgent for myself, plus, don’t you have to take your clothes off for those things? And then a stranger is rubbing you with oil? Am I the only one a tad weirded out by that whole thing?

We actually have a massage place four blocks from our house, and I’ve been eyeing it for a while. I was still as nervous as ever about the idea of a stranger touching me, but carrying around a 40-pound kid, cleaning, and working on a computer all the time are taking their toll on my body. My muscles felt like they needed some TLC, and I felt like I needed a break. So, I walked right in the other day and made an appointment.

Let me tell you the main thing I learned about massage: It ain’t no back rub. I’d say over half the time it was uncomfortable if not painful. I didn’t know what I was in for! Who cares about the fact that I’m nearly naked and a lady I don’t know is touching me? I couldn’t think about being shy while I was wondering how much longer she was going to be jabbing her elbow into my back!

The second thing I learned is that just because you keep your underwear on doesn’t mean your behind is going to stay covered. She pulled those suckers right down for the bootie massage that I didn’t was included. I guess it is called “full body,” but I would have been OK with that part being skipped. By the end, my pride was gone, and I was happy to make it through without whining or asking her to take it easy on me (which I probably should have done).

I was kind of delirious from laying with my face in a doughnut pillow for over an hour listening to weird new age music, but I had to jump up, get dressed, and walk home to relieve my husband, who had been watching the boys. I walked in to the usual chaos, and any relaxed feeling left me immediately. I’m still trying to decide if I would do it again. Do you like massages? I would love to hear about your experiences in the comments!

Maybe if I could have a massage and then relax with a glass of wine and bowl of this kale artichoke dip, the experience would be better. This creamy dip is really easy to make and doesn’t have mayonnaise, which I’m not a fan of in my dips. It uses reduced-fat ingredients to be slightly better for you than its heavier counterparts, and the kale adds a new twist on the classic spinach artichoke dip. This artichoke dip would be perfect for a girls night, watching football, or holiday parties!

Kale Artichoke Dip

Dig into this lightened up Kale Artichoke Dip for your next girls’ night, football game, or holiday party!

Ingredients

Scale

Instructions

  1. Heat olive in a large saucepan or deep skillet over medium heat. Add artichoke hearts, garlic, kale, salt, and pepper flakes. Pour wine over kale, and cover pan. Allow to cook 10-15 minutes, stirring often, until kale is tender.
  2. Add cream cheese and parmesan, and stir in cheeses as they melt. You can mash up the artichoke hearts a bit as you stir to make them easier to dip. Stir in sour cream, and continue cooking until hot and bubbly.
  3. You could serve now, or place in a broiler-safe bowl and sprinkle shredded cheese over the top. Place under the broiler for 5-10 minutes until top is melted and starting to brown. Serve with crackers or corn chips.

I’m sorry you had a bad first experience with massage! I am a massage therapist and promise you it should not be like that. First, if pressure is ever too much PLEASE SPEAK UP! We will not be offended. Everyone has a different sensitivity to pressure and we cannot feel what you are feeling. Not to say you are a wimp! But overly tight muscles that have never experienced massage have a tendency to be sensitive. The therapist should check in with you about pressure but even if not, speak up if u need lighter or deeper. It is also very important to drink lots of water after a massage or you will likely be sore the next day.
As far as her working areas you were not comfortable with, again speak up. Next time you go you can tell them they can skip that area before you even get undressed. I understand it can be a little weird having a stranger touch you, but be assured if we were weirded out we would not be doing it for a living. We have all shapes and sizes come to us, but really we just see muscles and tension.
Hope that helps, as you can tell I love massage and I hope you give it another chance.
On to the recipe… I love that you used kale and no mayo! I am having people over this weekend and will be making this for sure!

Thank you for the encouragement, Sarah! I will give it another try and will speak up next time! I hope you love the dip!

I actually love massages and have been meaning to get one for a while. I go to typical Asian foot massages where they do the body as well for 15 at “happy hour” and 25 for normal pricing. I think you def do need to speak up tho. My bf didn’t speak up and he ended up pretty sore the next day.

On to the dip!

A $15 massage is a steal, Renee! We have those kind of massage places around, and I’ve thought about going for a foot massage. Maybe I should try it out. Thanks :)

Oh my gosh…. can’t believe that was your first massage? I think I’ve had like 25 by now, love em! :) Part of it is because it helps with my headaches.

But back to this dish, sounds so creamy and down right delicious! Love it!

Are they supposed to hurt, Krista?? Maybe I just need to ask her to use a little less pressure next time. Thank you! xo

Great idea adding kale instead of spinach to artichoke dip! I love kale and this is a terrific use for it. I can never turn down a cheesy dip! :)

Thank you, Marcie! I can’t resist either. In fact, I’m about to have some leftovers for lunch :)

I used to get massages all the time. I would go on a Friday night after a week of working over a computer, on the phone racing around visiting clients in the various facilities in which they were recuperating.(I am a nurse case manager.) I absolutely LOVED it. She only charged $25.00 so I could afford every 2-3 weeks. If she was pushing too hard I told her. I too did not like the “lower body” massage; so I had her do my upper body only since my neck and shoulders were what needed attention. Unfortunately I moved and haven’t been able to find a replacement :-( , Your dip recipe sounds YUMMY must try it!

Thanks, Gillian! Nursing is such hard work. That sounds like a perfect way to end the week. If I go back again, I’ll speak up and say if she is hurting me. $25 is so affordable! This one was $48 for the full body, so maybe it would be around that if it was just neck and shoulders. Then I could do it more often and wouldn’t have to be embarrassed ;)

I have only had two massages. The first one sucked because the lady didn’t do it hard enough! The second one was good but still not as deep tissue as I wanted it to be. Gonna have to talk myself into going a third time. I’m like you – I feel uncomfortable in the room with those people. And I’d rather have a back and neck massage than a full body!

Anyways, this dip looks so freaking good, Andi! I love that you used kale instead of the typical spinach!

You should go to the lady I just went to. She does deep tissue all right! ;) I wonder if I could just pick the parts of my body I want massaged a la carte. “I’ll take neck, shoulder, feet, and arms please.”

Thanks about the dip, Julie! :)

Thanks, Gina! I think I will be eating it all by myself but not in one sitting ;) My kids won’t try it, and my husband is still recovering from hurting his jaw so can’t really eat it. More for me!

Yikes, you did have quite an experience with a massage person. I have had two. The first one I ended up with a stiff neck the next day, but the experience was actually quite relaxing. The second one was therapeutic, so didn’t really count.
Since I am not racing out to get another massage over the last few years apparently I wasn’t that taken with it either. Give me a hot springs or a bath tub and I relax. The kind of dip you made is the kind where give me a baguette or a bag of chips and the dip and maybe a glass of sangria and I am set. Nothing else is needed.

Andi

Yes, I could call this dip dinner too, Carol, especially if there was sangria to go with it. Maybe this massage was supposed to be therapeutic, which is why it hurt more than it felt good!
