Are you travelling or having family or friends come visit for the holidays? Or maybe you are lucky enough to live near family, so you probably have big gatherings on a regular basis! My mom and her husband are coming to visit us this Christmas, and we’re all very excited. If there’s one thing I have in common with them, it’s that we all love to EAT! The number one topic of conversation when we’re together is what we’ll eat next.

While we do love to cook and eat together, we don’t want to work too hard. (This is supposed to be a holiday, remember?) That’s why an easy breakfast casserole like this one is so perfect. It only takes about 15 minutes of active cooking time, and then you can be sitting around drinking coffee while it bakes. There’s plenty to serve all six of us, and if you’re cooking for a crowd, it’s just as easy to double the recipe.

You could use Farmland sausage patties or links in this recipe. I chose to use links and dice them up, but you could also just use the raw patties and crumble them as they cook like ground sausage. If you choose links, be sure to use a sharp knife so you make a clean cut through the casing on the outside.

Speaking of sausage, you don’t need much seasoning in this breakfast casserole since the Farmland sausages are already so well-seasoned. They bring a delicious flavor to the party. I love spicy food, so I included jalapeño too. I removed the ribs and seeds to tame the heat a little. If you want more spice, just slice the pepper seeds and all. If you like your food mild, leave the pepper out completely or use a mild variety like an Anaheim pepper.

This casserole reheats well or tastes just as great when it cools down a bit, so it’s perfect for holiday potlucks. We also enjoyed it reheated as breakfast for dinner, so really it’s good just about any time of day. Serve it with fresh fruit for a well-balanced meal that will please the whole family.

With its festive red and green peppers, this deliciously simple Sausage Fajita Breakfast Casserole is just right for your holiday breakfast or brunch. Also great as breakfast for dinner!

Instructions

  1. Preheat oven to 450 degrees F. Spray a 9 x 13″ baking dish liberally with cooking spray.
  2. Pour a shallow layer of hashbrown potatoes over the bottom of the pan, about an inch deep. Bake in preheated oven for 20 minutes.
  3. Meanwhile, heat olive oil in a large skillet over medium-high heat. Saute bell pepper, jalapeño, and 1/2 tsp. salt for 5 minutes. Add onion and sausage. Continue to cook, stirring often, until sausage is cooked through.
  4. When potatoes have cooked for 20 minutes, carefully remove pan from the oven. Spread sausage mixture over the potatoes.
  5. Whisk together eggs, milk, 1/2 tsp. salt, garlic powder, and pepper. Pour eggs evenly over the casserole. Spread cheese over the top.
  6. Reduce oven temperature to 350 degrees F. Return casserole to the oven, and bake 20-25 minutes longer, or until eggs are set in the center. Garnish with cilantro if desired.

 

Notes

The purple onion will bleed a bit when the casserole is stored in the refrigerator. If you plan to make this ahead of time, I recommend using sweet onion instead.
