This easy black beans and rice recipe goes great with just about any meat, or use it to fill burritos. You could even add diced chicken or sausage to make a one-dish meal. It is versatile, inexpensive, and very tasty.
This black and beans rice is good, y’all. It’s one of the few things everyone in our family likes, and it’s so versatile! Serve it as a side dish with any meat of your choice, stir in some chicken or sausage, use it to fill burritos, or just eat it on its own. Since I can eat way more than my fair share of this dish and the leftovers are so handy to have around, I like to double the recipe so we have plenty.
Do you like to have leftovers for lunch? I’m always so happy when my stomach starts growling at lunchtime and I remember that I have leftovers in the fridge. These beans and rice are definitely good to have on hand for lunches. They are great on their own, or you can make a quick burrito bowl with the addition of some lettuce, salsa, sour cream and cheese.
I found this original recipe on AllRecipes years ago, and I think it may be the first time I ever cooked with cumin. I was instantly sold! I would love to tell you what cumin tastes and smells like if you haven’t tried it yet, but I’m not really good at that sort of thing. When people start talking about flavor profiles, my eyes kind of glaze over. Just trust me that cumin makes the dish, and it’s worth buying a jar if you don’t already have some. I always include it in my Mexican recipes now because I love its distinctive flavor, and it’s all thanks to these black beans and rice. This is really one of my favorite recipes, and I hope you love it too!
