Pork Mushroom Risotto might sound fancy, but it’s very easy to make and has the down-home flavor of rice and gravy! Thanks so much to Smithfield for sponsoring this recipe.
Hi, friends! I can hardly wait to tell you about this new pork mushroom risotto recipe because my family absolutely loved it! You may know that my love for rice and gravy goes way back, and this meal is basically dressed up rice and gravy with pork and mushrooms. HEAVEN! I assure you, these recipes will blow you away. You will never get used to it. It will be something that you will always look for.

How to Make Creamy Pork Mushrooms Risotto Like a Pro
I made this easy dinner with a Smithfield Steakhouse Mushroom Marinated Fresh Pork Loin Filet. Smithfield fresh pork never disappoints in flavor or tenderness, and it was a perfect addition to this recipe! (If you can’t find the steakhouse mushroom pork loin at a store near you, just choose another of their savory flavors!)
Of course, I wanted even MORE mushroom flavor (I always do!), so I also added sliced baby Bella mushrooms along with the diced onion. It was a perfect addition. Flavorful!

That’s really all there is to this recipe: Rice, fresh pork, mushrooms, onion, beef broth, butter, and a little milk and parmesan cheese. Since the pork is already marinated, it brings so much rich flavor to the dish that you don’t need any other seasonings. It draws out the best flavor there is in the meat together with the mixed seasonings.
You may have heard that risotto is difficult or time-consuming to make, but I promise it’s not! I made this dish in just about 30 minutes. Here’s a video of how to do it:
Affordable Meal with Easy Pork Mushrooms Risotto
Not only is this Pork and Mushroom Risotto Recipe easy to prepare, but it’s also very affordable. I was surprised that just one cup of rice was enough to feed my family of four, but risotto is very filling! This recipe can easily feed 4-5 people with a vegetable on the side. If you are making dinner for two, risotto reheats very well too! Just stir in a splash of water to the leftovers before reheating to bring back the creamy consistency. It is very convenient when you have leftovers. It is easy to reheat and the flavor still stays the same.

If you’d like to make this a one-pot pork and mushroom risotto meal, you could also add in chopped asparagus, broccoli florets, or another vegetable with pork and mushrooms. Let me know in the comments how you make your perfect pot of pork risotto!

Pork Mushroom Risotto Recipe
This savory pork mushroom risotto is a satisfying dinner recipe that is easy to make in about a half hour!
- Total Time: 35 minutes
- Yield: 4 1x
Ingredients
- 2 tablespoons salted butter divided
- 1/2 large yellow onion diced
- 1 1/2 cups sliced baby bella mushrooms
- 1 Smithfield Steakhouse Mushroom Marinated Fresh Pork Loin Filet cut into bite-sized pieces
- 1 cup arborio (risotto) rice uncooked
- 4 cups beef broth
- 1/4 cup milk
- 1/2 cup Parmesan cheese
Instructions
- Heat a large stock pot over medium-high heat. Melt on tablespoon of the butter in the hot pan.
- Add onion, mushrooms, and pork. Stir and saute until pork is mostly cooked through, about 10 minutes. Remove meat and mushrooms to a bowl, and over with foil to keep warm. (It’s OK for onions to stay behind in the pan.)
- Still over medium-high heat, melt second tablespoon of butter. Pour in uncooked rice, and stir and cook for about a minute.
- Pour in one cup of broth. Stir often as broth simmers. When the broth is almost absorbed, pour in another cup and continue stirring. (It will take around 5 minutes for each cup to be absorbed before pouring in more.)
- When the last bit of broth is almost completely absorbed, stir in the cooked pork, mushrooms, and the milk. Keep cooking and stirring until liquid is absorbed.
- Stir in parmesan until melted. Turn off heat and serve.
