Hi everyone! This is Amy from Little Dairy on the Prairie! I’m thrilled to be back here sharing a recipe with you today! You are going to love this one!

Lately I’ve been feeling like I’m a dollar short and a day late ALL THE TIME! It seems no matter what I try I just can’t get on top of it! I have high hopes of dedicating one week to getting ahead, and I dream of being ahead for the rest of my life. Probably not going to happen! I’ll let you know how that turns out!

The other day I had to go to a Halloween party, and my costume was the over-scheduled mom. In other words, I went as I was because I was too busy to dress up! That same day, I knew I was going to be running for one activity or appointment to the next.

I knew if dinner was going to happen that day, it needed to be quick, easy, and ready when I walked through the door that evening. Since I already had some pork chops thawed out, I decided making Slow Cooker Barbecue Pork Chops was the answer!

These slow cooker BBQ Pork Chops only need three ingredients and a few minutes to throw together. They will become one of your go-to family dinners!

This is the easiest main dish in the world to make, and my kids beg for it! If I can throw three ingredients (plus salt and pepper) in the slow cooker and have a houseful of boys that think I’m amazing… I’m going to go with that!

This is how easy it is to get it ready:  Season the pork chops with salt and pepper. Mix apricot jam and barbecue sauce together. (Add a little more pepper if you want.) Create a layer pork chops and cover with barbecue/apricot sauce. Repeat until all the pork chops are in the slow cooker. Make sure the final layer is the barbecue/apricot sauce! Cook it on slow for 6-8 hours or on high for 4-5 hours.

When it was finally time for dinner, all I needed to do was add a green salad to my Crockpot BBQ Pork Chops, and that was it! Of course adding Three Cheese Mashed Potatoes is always a great option too when you have time!

Instructions

  1. Season the pork chops with salt and pepper.
  2. Mix apricot jam and barbecue sauce together in a medium bowl. Add a little more pepper if you want.
  3. Create a layer of pork chops in the slow cooker crock, and cover with barbecue/apricot sauce. Repeat until all the pork chops are in the slow cooker. Make sure the final layer is the barbecue/apricot sauce!
  4. Cook it on slow for 6-8 hours or on high for 4-5 hours.

 

Notes

If you want a little extra glaze on each pork chop, you can remove them from the slow cooker and set them on a baking sheet. Glaze them with barbecue sauce, and broil for a couple minutes until the barbecue sauce is a little sticky and glossy! This step is not necessary (I never do it on busy days), but if you want to serve these BBQ pork chops to company, it gives them a little extra curb appeal!
