I have been wanting to branch out with salad recipes lately, and this Chicken Salad does just that. Using a rice mix with seasoning adds a lot of flavor, so you only need a wee bit of dressing to hold it all together. This is one of the rotisserie chicken recipes I mentioned in my list of 5 Tips to Save Money on Meat and there was still plenty of chicken left to make Lemon Chicken Soup the next night. Chicken and Wild Rice Salad: A Hearty, Savory Dinner Salad

This easy, filling salad is filled with chicken, rice, fruit, and avocado.

  • Total Time: 40 minutes
  • Yield: 3-4 1x

Ingredients

Units Scale
  • 1 box long grain and wild rice mix with seasoning packet (like Rice-a-Roni)
  • 2 cups cooked, shredded chicken (I used rotisserie chicken)
  • 1 apple diced into bite-sized pieces
  • 1 avocado flesh removed and diced
  • 1/4 cup dried cranberries or cherries
  • 1/4 cup prepared poppy seed dressing
  • 12 ounces salad greens (I used a blend of baby spinach and romaine.)

Instructions

  1. Cook rice according to package directions, and allow to cool. (You could do this the day before and cool it in the refrigerator until you are ready to make your salad.)
  2. Gently toss all ingredients together and serve. Doesn’t get much easier than that!

I with my family would eat salad! If I tell my husband I want just a big delicious salad meal, he just looks at me like I’m a nutter…and then tells me he has never once experienced that feeling. And my daughter will eat a few “green leaves” but she looks at me like I’m the meanest mom ever for forcing them upon her with every bite.

I am kind of on the side of your husband, but I am OK with salad for a meal if it has meat in it. And comes with bread. Apparently I’m worried about not getting enough to eat, which is really, really not a problem for me. This salad is more like chicken and rice with lettuce in it. Tell him that and see if he’ll go along with it ;)
