I can’t believe it’s already mid April. Where is this year going?? Since this is our first full year in Texas, I wasn’t sure what to expect with the weather. We moved here in the heat of the summer, and I was pretty sure it would never cool down. Winters got pretty cold though, even with some light snow. Spring has been gorgeous with plenty of days in the 60s and 70s. I’m realizing that although the summers are brutal, that 100-degree weather does only last a couple months.

My mom lives in Maryland (we’re trying to get her to retire to Austin this year), and I couldn’t believe she said they had snow in the forecast this month! While I’m expecting warm days, it’s still winter weather up north in April. What’s the weather like where you are this time of year?

The reason I’m talking about the weather is because this fresh strawberry pie definitely tastes like Summer! Nowadays, we can usually find strawberries in the grocery store all year long, but they always taste the sweetest in the summer. This easy pie is absolutely loaded with fresh strawberries, all held together a strawberry gelatin glaze. Top it with whipped cream or Cool Whip for a delicious treat!

I can’t take credit for this classic recipe. It can be found in just about every church cookbook or on the box of strawberry gelatin! I did add the step of spreading a thin layer of cream cheese on the crust to keep the filling from soaking the crust and making it too soggy. It also adds a slight cheesecake flavor, which is always welcome!

Classic Fresh Strawberry Pie

Ingredients

  • 1 pre-made pie crust
  • 3 tablespoons cream cheese softened (reduced fat OK)
  • 1 quart fresh strawberries
  • 3/4 cup sugar
  • 2 tablespoons corn starch
  • 1 cup water
  • 1 3ounce packet strawberry gelatin
  • whipped cream or Cool Whip optional (but encouraged)

Instructions

  1. Bake pie crust according to package directions for one-crust pie. (To skip this baking step, use a pre-made graham cracker crust.) Allow to cool.
  2. Gently spread a thin layer of softened cream cheese all over the bottom and up the sides of the pie crust.
  3. Cut off green stems and halve, quarter, or slice strawberries. Place cut strawberries in prepared pie crust. (You can arrange them carefully into a pattern or just pour them in. It will taste great either way!)
  4. Whisk together sugar and cornstarch in a small saucepan. Slowly stir in water, whisking the whole time to avoid lumps. Heat over medium heat until boiling, stirring constantly. Boil one minute and remove from heat.
  5. Whisk gelatin into the sugar mixture for two minutes. Allow to cool to room temperature.
  6. Pour cooled gelatin over strawberries in pie crust. Refrigerate for at least two hours before serving. Top with whipped cream if desired.
