I’m such a sucker for anything involving coconut. Smoothies, curries, shampoos, lotions, you name it. I find the taste and smell irresistible! I even used it in my hair color mix last time around. As it turns out, you can mix henna with coconut milk to condition your hair while it colors. I swear, coconut is good for everything!
Have I told you that I started coloring my hair naturally with henna a few months ago? It’s a bit of a weird ritual to do the coloring, but I love it. It’s all natural, inexpensive, and actually good for your hair. In fact, I’m sitting here looking silly with a shower cap on right now while the henna and indigo work their magic on my roots. Sorry for the tangent. Let’s get back to the marinade. Just look at this chicken and salmon after marinating in seasoned coconut milk. It is SO moist and flavorful, and this marinade couldn’t be much easier to mix up. The coconut flavor is actually pretty subtle, but it does add a bit of tropical flavor. This is one recipe that both of my picky kids love too. You can eat this chicken or salmon on its own or use it to fill tacos or top a salad. I grilled the chicken and cooked the salmon on my stovetop, but I know you’ll love it however you decide to cook it!
