What day is it? I’m a little foggy because I’ve spent so many hours over the past couple weeks building and populating a PTA database. My head is swimming with forms and parent names and imports. Every spare minute I could find, I scurried to my computer to clean up data, create users, or figure out how to create a report we needed. It has been a ton of work but extremely rewarding. I haven’t done database work for about 15 years, so it’s fun to have a chance to get back to it.

Here’s what’s not fun: I still have a family, blog, and house that were already keeping me plenty busy! I am barely keeping up with laundry, writing recipes, and feeding hungry mouths. When things get this busy, nothing sounds better than a 15-minute dinner! I’m not even joking about the 15 minute part. This meal gets on the table fast thanks to Success® boil-in-bag rice.

I’m going to be honest with you here. Until I had this opportunity to try Success® Jasmine Rice, I probably hadn’t tried boil-in-bag rice since I was in college. There’s no good reason for that. I guess I thought I could cook rice perfectly fine on my own without a bag, but I can’t tell you how many times I have boiled over rice or ended up with crunchy grains even though I followed the cooking instructions exactly. I even bought a rice cooker recently to try to have more consistent results with rice, and even that sometimes didn’t work properly! More than once, I was ready to serve dinner and opened the rice cooker to find a pot full of water and raw rice. Not cool when you’re ready to eat.

One bag is just the right amount for two or three hungry adults, or you can cook as many bags as you need. There is no measuring, no mess, and the bags are BPA free. I didn’t even know you could get boil-in-bag jasmine, basmati, and brown rice. I need to get with the times! Ginger Soy Chicken over Jasmine Rice

This tasty stir fry is ready in only 15 minutes, perfect for busy nights!

Ingredients

  • 1 bag Success® boil-in-bag jasmine rice
  • 1 lb. boneless, skinless chicken breasts cut into bite-sized pieces
  • 2 c. snow peas chopped if desired
  • 1 1/2 c. shredded carrots
  • 1 sweet onion sliced
  • 2 tbsp. soy sauce or tamari sauce for gluten free
  • 1 tsp. grated ginger
  • 1 tbsp. lime or lemon juice
  • 2 tsp. brown sugar
  • 1 tsp. cornstarch
  • red pepper flakes optional
  • up to 1/4 c. water if needed

Instructions

  1. Fill a large saucepan with water, add about a teaspoon of salt, and submerge the bag of rice in the water. Bring to a boil over medium-high heat, and boil for 8-10 minutes.
  2. While rice cooks, spray a skillet with cooking spray and heat over medium-high heat. Add chicken, snow peas, carrots, and onion to hot skillet, and stir fry until chicken is mostly cooked and onion is tender.
  3. Whisk together soy sauce, ginger, lemon juice, brown sugar cornstarch, and a dash or two of pepper flakes if desired. Pour sauce over chicken, stir to coat, and continue cooking until chicken is cooked through and sauce is thickened and shiny.
  4. If sauce is too thick, stir in up to 1/4 c. water to the desired consistency.
  5. Scoop rice into bowls, and serve topped with chicken and vegetables.

Notes

You can make this recipe even easier by substituting bottled teriyaki sauce for the sauce ingredients.
