Can you guys believe Summer is nearly here?? I’m sort of in denial that my kids’ summer break starts Friday. Of course, they are super excited about their last day of school, and it falls on Memorial Day weekend. That gives us two reasons to celebrate with a cookout!

I think we’ll kick off summer right with these succulent Chicken BBQ Burgers. I made them a couple weeks ago, and my whole family loved them! Who wouldn’t love seasoned chicken patties grilled to perfection and slathered with Stubb’s Sticky Sweet Bar-B-Q Sauce?

I was pretty excited when Stubb’s invited me to create a burger recipe using one of their big, bold, Texas-style sauces. I always keep a bottle or two of BBQ sauce in the fridge since it’s a favorite condiment in my family. We like it on hot dogs, in casseroles, on french fries… You name it! Making BBQ burgers definitely sounded like a good idea to me.

Stubb’s Sticky Sweet is a perfect match for these fun Hawaiian burgers with pineapple. It’s their sweetest sauce, made with brown sugar and molasses. I usually go for spicy sauce, but this sweet flavor paired perfectly with fruity chicken burgers!

If you are a little uneasy about putting pineapple on your burger, I get it. So were my kids. In fact, they just ate their grilled pineapple slices on the side! I will admit that pineapple on a burger sounds a little weird, but just think about how good it is on Hawaiian pizza! It’s up to you if you want to add a little tropical flavor to your BBQ burgers or leave out the fruit.

When it comes to serving up your Memorial Day burgers and hot dogs, I encourage you to ditch the boring ol’ ketchup and mustard and try BBQ sauce instead! For these Hawaiian burgers, Stubb’s Sticky Sweet sauce is cooked right in AND drizzled on top for even more Bar-B-Q flavor! BBQ sauce spices up classic burgers too!

  1. Preheat grill. You should spray the grill with high-heat cooking spray before lighting it OR rub it liberally with vegetable oil (using a paper towel and tongs) once the grill is hot.
  2. Meanwhile, stir together onion, BBQ sauce, oats or breadcrumbs, chicken, and seasoned salt. Shape meat into four burger patties. (Make a thumbprint in the middle of the patty before putting it on the grill. This will help the patty cook evenly — no more overdone edges and undercooked center!)
  3. Place burgers on the hot grill, and allow them to sear nicely before flipping (at least 5 minutes).
  4. Flip your burgers, and place the pineapple slices on the grill if desired.
  5. When burgers are about cooked through, place a slice of ham and then a slice of cheese on top of each patty. Flip the pineapple slices, and turn off heat. Allow to cook a couple more minutes until the cheese is melted.
  6. To assemble burgers, place lettuce on a bottom bun. Top lettuce with a cheeseburger patty, then a pineapple, and pour the desired amount of BBQ sauce on top. Put on the top of the bun, grab a napkin, and dig in!

Hi Andi: I was glad that you posted this recipe for Hawaiian Chicken BBQ Burgers last week, before the Memorial Day weekend. This burger was one of several which we offered at our weekend cookout….but it was the most requested burger.
Fortunately, I prepped a lot, since I kind-of knew that our guests would like to (at least) try one. Well, everyone loved them, and they’ve already requested for us to serve them at our next summer backyard event.
Surely, these magnificent burgers would be every bit as delicious, even if we made them with a good & lean ground turkey meat (90/10), – instead of using ground chicken.
Hubby & I served these burgers on lightly buttered & grilled (on the inside) Brioche Buns. I like to use Boston Lettuce on mostly all of my sandwiches, …. whether they be warm or cold. I also like Baby Romaine Lettuce, but mostly in salads, …. and mixed in with several other interesting salad greens.
All in all, our Memorial Day cookou5 was a huge success. Thanks for your terrific recipes.
