It’s August, which around here means back-to-school time! It’s good to be back to the school routine, but our evenings do get busy with classes, homework, school events, and the like. You know I always love easy dinners, but that’s definitely the case on school nights!

Today I’ve got a tasty One-Pot Lemon Garlic Pasta recipe for you that is loaded with tender, flavorful bites of pork tenderloin. I used a Smithfield Roasted Garlic and Herb Marinated Fresh Pork Tenderloin. Since it’s already marinated, it brought most of the flavor to the dish without needing extra seasonings.

Not only does this quick recipe have a short list of ingredients, it also cooks all in one pot! You can get it on the table in about a half hour including prep time, which is so nice for busy nights. Stir in veggies like broccoli florets or chopped asparagus for a one-dish meal, or serve it with a simple side salad on the side.

If you get a large pork tenderloin, you could make two recipes out the one cut of meat! This one-pot Lemon Garlic Pasta with Pork can be on the table in about a half hour. It’s a dish the whole family will love and perfect for busy nights!

Ingredients

Scale
  • 1 tablespoon olive oil or cooking spray
  • 1 pound Smithfield Roasted Garlic and Herb Marinated Fresh Pork Tenderloin cut into bite-sized pieces
  • 12 ounces bite-sized pasta uncooked
  • 2 cups reduced-sodium chicken broth
  • 2 cups water
  • 2 tablespoons fresh lemon juice plus more to taste
  • 2 tablespoons cream cheese reduced fat OK
  • 1/3 cup Parmesan cheese

 

Instructions

  1. Heat olive oil in deep 12″ skillet over medium-high heat. Stir fry pork in hot oil until mostly cooked on the outside.
  2. Stir in pasta, chicken broth, water, and lemon juice. Bring to a low boil. Continue boiling, stirring frequently for recommended cook time on the pasta package.
  3. About two minutes before pasta is finished, stir in cream cheese and parmesan cheese until cheeses are melted about sauce is creamy. Serve with additional parmesan and lemon wedges if desired.

Notes

  • Smithfield Marinated Fresh Pork is available at local Walmart stores nationwide.
  • If you choose an original recipe pork tenderloin, saute two cloves of crushed garlic and one teaspoon of Italian seasoning with the pork.
