This healthy and delicious Spinach Strawberry Salad is a dinner adults and kids will both love!
I love the flavor combination of this salad: Sweet berries, tart kiwi, and savory chicken. It’s very healthy too! There is only a very small amount of oil in the dressing, and it’s loaded with vitamins, fiber, and protein.
Do you like eating salads for dinner? I usually think I want something that will stick to my ribs more, but then when I’m eating a salad like this one, I love it. There is a great variety of flavors and textures, and I feel good about myself after dinner since it’s so good for me.
Use a juice you have on hand or that you will want to drink on its own since only a tablespoon is needed for this salad dressing. This recipe is written for a lightly dressed salad, so double the dressing portion if you prefer more. - 10 ounces fresh baby spinach
- 2 handfuls strawberries diced
- 2 kiwis peeled and diced
- 1 pound boneless, skinless chicken breasts or tenders
- seasoned salt of your choice I like Trader Joe's Everyday Seasoning
- 1 tablespoon vegetable oil
- 1 tablespoon honey
- 1 tablespoon orange, cranberry, or pomegranate juice
- 2 tablespoons seasoned rice vinegar
- 1 tablespoon plain yogurt or sour cream works
- 1/2 teaspoon poppy seeds
- 1/2 teaspoon sesame seeds

- Spray a skillet with cooking spray and heat over medium-high heat. Lightly sprinkle chicken with seasoning salt, and brown in skillet on both sides until cooked through.
- Meanwhile, mix all dressing ingredients in a small airtight container. Shake very well until blended and set aside.
- Place spinach and cut fruit in large salad bowl. Cut cooked chicken into bite-sized pieces and allow to cool slightly before adding to greens. Pour dressing over salad and chicken, and toss to coat.

When do we add the yogurt/sour cream? Is it part of the dressing or is it a garnish on the salad. You did not indicate that in the recipe instructions. Sounds awesome!

Oh sorry for the mistake. I changed the ingredients to just say mix all the dressing ingredients together, which is easier anyway! I hope you enjoy it!
