
Have you noticed that my cocktail recipes have been sadly lacking in muddling lately? I realized that last night when I was whipping up this super easy twist on a classic: Rum and Cola with coffee liqueur. I was already committed to making this tasty drink for this week, but soon we will be muddling something for sure!
This drink hardly even needs a spoon. It’s for nights when you are tired, so tired that you want some caffeine involved in your happy hour. OK, I actually used all natural cola with real cane sugar and no caffeine, but you COULD use caffeinated soda here. Even better, why not sub ice cubes made with leftover coffee for regular ice? That would add even more coffee flavor!
My husband didn’t look thrilled when I said we were having a variation on rum and cola for this week’s cocktail until he tasted it. He said he doesn’t usually like the regular old kind, but he really liked it with the coffee liqueur addition. I was excited that my version changed his mind! I hope this sweet, caffeinated cocktail puts a spring in your step on this fine Friday night. Cheers!

Bright Eyes Rum and Cola
Coffee liqueur puts a tasty twist on this classic cocktail.

Ingredients
- 1 oz. white or gold rum
- 1 oz. coffee liqueur like Kahula
- 4–6 oz. cola diet soda is welcome too!
- ice cubes made from leftover brewed coffee optional
Instructions

Fill a 12-oz. glass with regular or coffee ice cubes.

Pour rum and coffee liqueur over ice, and fill with cola. Lightly stir and serve.

I’m in, Andi, but first I have to pick up my oldest, take her shopping for a birthday present for a friend, then take my youngest swimming with her Brownie troop.
