I’m going to keep this short and sweet this week because I am low on time and sleep! Besides the kids keeping me busy all day and The Short One not sleeping well at night, I’ve been spending time working on a mobile version of The Weary Chef for all you fellow chefs visiting on mobile devices.  Expect an exciting announcement about that (hopefully) next week!

Last week I featured lots of seafood dishes, and this time around poultry is in the spotlight. I’m only sharing three new recipes,  but there are a lot of great past favorites to choose from in this easy weekly dinner menu. Let me know which are your favorites!

  1. Tandoori Chicken with Cucumber Salad and Naan – This was my first try making an Indian dish at home, and boy did it turn out good!  I threw together a simple cucumber salad similar to this version from Simply Recipes to serve on the side.  I was lucky enough to find fresh spinach paratha from our farmer’s market, but you can find naan in most supermarkets near the pita in the bread section.Broiler Tandoori Chicken - Authetic tasting #Indian #chicken recipe by @wearychef
  2. Burgers and Fries – This was a quick and easy dinner to make the night our dishwasher was broken.  I used pre-formed hamburger patties seasoned with steak sauce and baked frozen fries in a 450 degree oven for 25-30 minutes.  We enjoyed Raspberry Bourbon Lemonade with our dinner, and the boys had the same minus the bourbon.Easy Burger and Fries with the Fam
  3. Salmon Nachos – I actually made chicken nachos this week (more chicken!) but I didn’t realize until it was time to serve them that our salsa had gone bad.  Also, The Pants got the wrong beans chose different beans than I would have, and overall the nachos were less than stellar.  Long story short, please try these salmon nachos instead!
    Now, spread the shredded salmon evenly over the nachos.
  4. Baked Tri Tip Roast with Veggies – This roast is very tasty and an easy way to make steak for a crowd since you only have one piece of meat to cook.  I baked fresh corn (husks removed) wrapped in foil at the same time as the meat and served a side salad too for a simple, summery dinner.  (So sorry about this photo, but we devoured it before I could do retakes!)Baked Tri Tip Roast - Easy #recipe for serving #steak to a crowd | @wearychef
  5. Skillet Pasta with Summer Vegetables – If you like sausage and squash, then have I got a recipe for you!  It’s no secret that I love one-dish meals, and this one is a definite keeper.Skillet Pasta with Summer Vegetables - #easyrecipe by @wearychef
  6. Easy Chicken and Dumplings – My friend recently made this with spelt flour dumplings for her husband with wheat intolerance.  I don’t know much about alteranative flours, but she said the recipe still turned out great.Easy Chicken and Dumplings
  7. 15-Minute Taco Salad – I shouldn’t even have to say anything about this recipe after the 15minute part. Who doesn’t want a delicious dinner that can be ready so quickly?!  This does make for two fiesta nights (meals with Mexican food) twice in one week, but this is still showing remarkable restraint on my part since I could eat Mexican 5 nights/week and be happy.15-minute Taco Salad - Perfect quick dinner for busy weeknights! by @wearychef

I love how you spotlighted the poultry…loving all of these dishes. I think my favorite to try first would be the Chicken Tandoori…looks and sounds delish! But then the nachos looks extremely tantalizing too…so yum!

tandoori chicken, please :-) that looks great. No improvements in the sleep dept, then? Shoot. I remember those transitions being rough, but once you’re on the other side it’ll go much more smoothly. Motherhood is all about adapting, even when we’re good with status quo. Arrrgh. Know I’m thinking about you and yours!!!! And thank goodness for cocktails, yes? (maybe that would help him settle down at night? JUST KIDDING, do not call the authorities on me ;-) )

Love that you’re going mobile. Weary Chef is growing an empire, yes? Soon you’ll be looking into marketing TWC cookware, etc. Remember me when you’re looking for an editor for your WC cookbooks–I’m a professional :-)

Actually he did great last night! Two rough bedtimes, and then last night he went to bed without protest and slept all night! I made myself go to bed at 10 and slept an unheard of 8 hours straight. We’re all feeling better this morning!

Creating an empire is funny. It’s more like I’m finding things I should have done right in the first place, and now I’m trying to fix them!

I hope you try the tandoori chicken. It was really good. Do you grill much?

what did it feel like to sleep 8 hours straight? I’ve heard folks say that until they had kids, they never realized how little sleep they needed. Found this to be FALSE up until a year or so ago. Always needed 8 to 9 hours of sleep a night, but somehow have gotten way off track. I blame blogging and fb ;-)

I hate going to bed early because I have to give up “my” time, but catching up occasionally is a must. I have adjusted to functioning on 6 hours of sleep, but the past week it was more like 5. Friday night I only slept 4 hours, and Saturday I was a complete mess. All that sleep deprivation had caught up with me, and I HAD to sleep a long stretch whether I wanted to or not. I’m sure I’ll be up late again tonight to start the cycle over. Damn blogging… ;)
