This gorgeous, Quick Chicken Pot Pie is ready in only about 30 minutes! It’s also great with leftover Thanksgiving turkey!
Making pot pie from scratch is nice when you can do it, but who has time for that on a weeknight? It’s great to serve up a warm, comforting meal like this even on busy days, and with the new Campbell’s Soups for Easy Cooking you can! You don’t even need to use the stovetop for this easy dinner recipe, and it only takes a few minutes to put together. I’m going to show you how right here in this video!
I may have eaten way more of my fair share of this pot pie because, as I’ve told you before, my boys are not the best eaters. They didn’t clean their plates, and I wasn’t going to let creamy, savory chicken pot pie go to waste so I polished off theirs too. I can’t wait to enjoy this again next week with leftover turkey! Campbell’s Soups for Easy Cooking are the next generation of cooking soups like cream of mushroom and cream of chicken. When you need a quick addition to casseroles, meatloaf, Mexican dishes, and more, these handy soups are just right, and they all have a 30-minute recipe printed right on the carton! That makes it really easy to grab all the ingredients you need when you’re standing in the grocery store wondering what to make for dinner. Look for this Creamy Herb and Garlic soup along with the Savory Portobello Mushroom, Sweet Onion, and Mexican Style Tomato flavors in the soup section of your grocery store. Check out the Campbell’s Soups for Easy Cooking recipes for ideas of what you can make with all four flavors!
Preheat oven to 400 degrees F. Spray a 9″ deep dish or 12″ shallow pie pan with cooking spray and set aside.
Stir together the soup, chicken, and vegetables, and transfer to the pie pan.
Stir the milk, egg and baking mix in a small bowl. Spread the batter over the chicken mixture. (I found it easiest to spread with my fingers. The dough will just barely cover a 12″ pan.)
Bake for 25 minutes or until the topping is golden brown.
Notes
If you prefer, you can use a refrigerator pie crust instead of the biscuit mix topping.

Hi, Tracy! Rotisserie chicken would be great, or you can lightly season chicken breasts and/or thighs and bake them. Sometimes I bake my chicken in my toaster oven since it’s just the right size to cook them without heating the whole oven. There’s plenty of flavor in the sauce, so really any kind of chicken works great. Hope that helps, and thanks for asking!
