You’ll love these easy BBQ chicken burgers with barbecue sauce and cheddar cheese cooked right in!
I have a confession to make. While I call myself weary because my kids wear me out (which is 100% true), I stuck to easy recipes well before I became a mother. I had much more time and energy back then, but I still had zero interest in a recipe with a mile-long list of ingredients or a dozen steps.
I don’t like to call myself a lazy cook. It sounds much nicer to say I am efficient. Why should I be bothered to baste burgers with sauce and melt cheese on top when I can just stir everything together and call it dinner? That’s what I did with these scrumptious and easy barbecue chicken burgers. You will love the smoky, sweet flavor in every bite, and you can’t beat the simple prep!
OK, so I also melted cheese on top… There is cheese cooked right in, but you can never have too much cheddar if you ask me. These chicken burgers are big on BBQ flavor. Since there is a full half cup of sauce added to the meat, the patties are pretty loose. I have only made these BBQ burgers in an iron skillet on my stovetop, and I’m pretty sure they would fall apart on a grill. If you are a diehard griller, just think of this as your rainy day burger recipe.

Total Time:20 minutes
Yield:41x
Ingredients
UnitsScale
1pound ground chicken
1/2 sweet onion finely diced
1/2cup barbecue sauce
1/2cup cheddar cheese shredded
1 egg
1/2 teaspoon kosher salt
1cup bread crumbs or crushed cornflakes
4 slices cheddar cheese optional
4 hamburger buns
reduced-fat mayonnaise
2 tomatoes sliced
2cups baby spinach leaves or lettuce
Instructions
Stir together chicken, onion, BBQ sauce, shredded cheese, egg, and salt.
Stir in 1/2 cup breadcrumbs or cornflakes. The amount you need will depend on which of those you use and how thick your sauce is. Add up to 1/2 cup more as needed until the meat can hold together into patties.
Divide meat mixture into four portions, roll each portion into a ball, and then flatten into a patty.
Spray large skillet with cooking spray, and heat over medium-high heat. Place burger patties into hot skillet, and cook for approximately 7 minutes per side, or until cooked through.
Place a slice of cheese over each burger to melt for the last 2-3 minutes of cooking (if desired). Spread a light layer of mayonnaise on both sides of the buns, add cooked patties, and top with spinach and tomato. Enjoy!
In case you’re wondering what to do with the rest of the bottle of BBQ sauce, don’t miss these delicious ideas!

Hi, Martie! I explain in that post that I changed to having one menu post that I update every week, so you can just come back to that each time to see what’s new. The top image is the same, but when you scroll down, the photos, links, and menu builder are new every week. This week’s is a Thanksgiving week menu, so when you scroll down to the recipes, they are all targeted for this week. Let me know if that doesn’t make sense or if you have questions. Thank you!!

Oh my gosh- my picky 6 year old ate 2 of these!! They were a BIG hit with young and old. I didn’t have chicken, but the ground turkey turned out well. Thank you for a great easy recipe! I seem to be somewhat knocking myself out making time-consuming bits, so this was a relief with great results!

YUM! Need to try this with the ground turkey I just stocked up on at a great price. I’m terrible at finely dicing onions, so I frequently grate them right over the meat for added flavor and moisture.

Grating onions sounds good, but I feel like that would make my eyes burn even more! I may just be terrible at grating ;) Thanks, Val!

I was trying to get my husband to add bbq sauce to our burgers the other day.. I wanted a ton in there, but he reminded me that they could fall apart :) Next time I’ll have to opt for the skillet!

Oh how funny! Yes, these would definitely fall apart on the grill I think, but they worked great in the skillet. Thanks, Beth!

Haha, I am the opposite. I find I always make recipes so complicated. As a food blogger, I am realizing other readers do not want to spend hours in the kitchen. I would never call it laziness, just practical :)

Yes, let’s say practical instead of lazy. That sounds better ;) Thank you, Kacey!
Chicken Delight is a simple comforting casserole that should be easy to make and something the kids will enjoy. A lot of chicken and rice casserole recipes can be overly complicated and unnecessarily...
I love this recipe because it has it all: kick from the buffalo sauce, crunch from the veggies and crispy onions, creamy sauce, and tender chicken, all tied together in a flour tortilla.
