Halloween is certainly one of our favorite holidays as it involves costumes, interesting cooking, and lots of decorations. This gives me the chance to try new fun recipes with crazy decorations and even involve my kids in the process. This spooky Halloween brownies recipe is the case, too! You can see how they surely inherited the talent from their father. ;)
Making the Perfect Brownies for You
Yeah, this will always be an interesting topic to bring out between cooks. I don’t have the same taste in brownies as none of my friends. That’s quite funny considering they love almost every dish I make, but this is surely not the case.
So, one of my best friends, that is an extraordinary cook and mother of three pairs of gorgeous blue eyes, is a fan of fudgy brownies. My hubby, another cook I adore (one of the reasons I made him my husband), would eat only chewy brownies! Insane… they are all mad!
For this spooky Halloween brownies recipe, I prepared my favorite dough – a cakey still dense. In addition, the icing gives it a certain moist even my hubby admires!
How to Make Fudgy Brownies?
If you want to make fudgy brownies you have to use a higher fat-to-flour ratio than you usually use to make cakey ones. So, add more fat (butter, oil, or chocolate). Fudgy brownies should be moist, dense, and gooey, with almost the texture of fudge, however, not quite as compact.
Also, keep in mind that, the amount of sugar and eggs does not change whether you’re going fudgy or cakey when you prepare your Halloween brownies.
How Do You Make Cakey Brownies?
A cakey dough for brownies has more flour and relies on baking powder for leavening. Cakey brownies should be as the name implies, light, moist and airy, with a slightly fluffy, cake-like interior. So, if you want to have a fluffy brownie perfect for a light dessert, you should remember to add baking powder and use more flour.
What Makes a Brownie Chewy?
The secret to making chewy brownies is the addition of canola oil. Canola (Brassica napus L.) is an oilseed crop created in Canada by crossbreeding the rapeseed plant. The name “canola” comes from “Canada” and “ola,” denoting oil.
Also, these brownies have about double the amount of butter (if you don’t use canola oil), flour, and sugar than the cakey brownies. This provides richness and a gooey structure in the brownie. The chewy brownie has an additional egg and a little more flour than the fudgy brownies, which gives it a more “bite”.
Spooky Halloween Brownies Recipe

Easy Step-by-Step Recipe for Halloween Brownies
Now that you know exactly what you need for this spooky brownies recipe, it is time to start the cooking process. You don’t have to worry about the difficulty level, as it is actually one of the easiest dessert recipes I have ever prepared.
Preheat the oven to 325 degrees and prepare your baking pan. You can either use baking paper and some nonstick spray (as I did) or make things in a good classic way: using butter and flour. In addition, I recommend using a 9-by-13-inch baking dish.
Whisk together flour and salt.
Next, melt the butter and add both sugars; whisk to combine.
Whisk in cocoa powder. When it comes to this step, I start mixing with a hand mixer on low power as I find it hard to wisk. However, you can do as you please.
Add eggs, one at a time, and whisk until well combined and glossy. Then, mix in vanilla.
Finally, add the flour mixture and stir until just combined (do not overmix).
Pour batter into prepared pan and bake until top is crackly (about 30 minutes). Also, a tester inserted into the center should come out clean. Let them cool for 30 minutes, then lift and cut the brownies.
While brownies are cooling, beat confectioners’ sugar, cream cheese, and water with a mixer on low speed until fluffy but dense, 7 to 8 minutes. Transfer icing to a piping bag.
Now, just decorate with spider webs and mummies. Let the kids help, they will be thrilled!
