How’s summer treating you so far? We’re spending some time back in Mississippi, and it sure is hot down here! Warm weather is perfect for grilling, but when it’s down right sweltering, you don’t want to be standing around a hot grill for too long. That’s where this grilled pork tenderloin with avocado salad comes in. It is ready FAST!

Pork tenderloins are great on the grill, but it takes a little while to get them cooked through to the center. You also have to be careful not to overcook the outside of the pork while you’re waiting for the middle to get to done. I wanted to make grilling a Smithfield pork tenderloin fast and foolproof, so I decided to butterfly cut it. It worked great!!
All you need to do is slice the tenderloin down the middle lengthwise, leaving it connected along one side. Each half is a thinner cut of pork, so it cooks very quickly and evenly. I think this might be my new favorite way to grill pork!

In the small amount of time it takes to preheat the grill and cook your tenderloin, you can make this quick Lemon Avocado Salad. I made this recipe twice in one week because my husband loved it so much. (So did I!)
All you need is avocado and grape tomatoes and a couple other ingredients for seasoning. You can serve this as a salad on top of or next to your pork. You can also dice up the avocado and tomato a bit smaller and serve it as avocado salsa with chips.

Quick Grilled Pork with Lemon Avocado Salad
This butterflied pork tenderloin is grilled to perfection and then topped with a quick and easy lemon avocado salsa. This dinner is ready in under 30 minutes and is full of flavor!

Ingredients
- Smithfield Roasted Garlic & Cracked Black Pepper Marinated Fresh Pork Tenderloin
- 1 1/2 ripe avocados peeled and diced
- 1 cup halved or quartered grape tomatoes
- 1 tablespoon fresh lemon juice
- 3 green onions sliced thin
- kosher salt and pepper to taste
Instructions

Preheat grill. Slice tenderloin down the middle lengthwise, leaving one long side connected so you can open it up like a butterfly. (Don’t stress if you accidentally cut it all the way through. Just grill the two pieces!)

Spread a little vegetable oil over the hot grill using tongs with an oil-soaked paper towel. (Towel should not be dripping with oil or it can cause high flames.)

Place prepared tenderloin on the hot grill and cook about 5-7 minutes on each side, until the center has reached at least 150 degrees F. Remove cooked meat to cutting board.

Gently stir all salad ingredients together. Serve within an hour (before avocado starts to brown).
