Hello there! I’m so sorry I have been neglecting you recently in the new recipe department, but we have been MOVING! We moved from San Francisco to Austin in August, but our new house had to be built from the ground up. We have been in a temporary apartment and at long last closed on our house last week.
I am giddy about being in our new home, but WOW! moving is a lot of work. I don’t think I’ll ever be done unpacking, and I have been dead tired by the end of every day. Of course my family still needs to eat dinner every night, so easy slow cooker dinners like this pork and beans have been lifesavers!
You only need a few ingredients to make this flavorful crockpot pork, starting with Smithfield Boneless Pork Shoulder Seasoned Carnitas. You can always count on Smithfield marinated fresh pork to be flavorful and tender, and I love that the job of seasoning the meat is already done for me!
This pork and beans recipe features poblano peppers, which add a nice flavor without adding heat. If you aren’t familiar with poblanos, they are the large, mild peppers used in chile rellenos. You can typically find them near the jalapeños in the grocery store, but don’t worry because they aren’t spicy!
We enjoyed this pork and beans over rice. If you need to get dinner on the table in a hurry, you can use microwaveable or instant rice. I’m old fashioned and usually cook my rice in a pot on a stove, but I do love the fast varieties for when I’m short on time!

Add pork, water, salsa, peppers, and beans to slow cooker. Gently stir to combine. Cook on high 8 hours.
Serve pork and beans over hot rice. Top individual portions with sour cream if desired.
