One of my best friends is lactose intolerant so she asked me if I can change a little bit the main recipe for her. You know how much I love a challenge and this one was for a loved person, therefore the result was necessaire to be great.

The steps when preparing the recipe are exactly the same, however, I adapted the ingredient list a little. Also, I know that she is a lemon fan, so I added some lemon flavor to the dairy-free stuffed chicken recipe, too.

  • 4 chicken breasts (boneless and skinless);
  • 2 tablespoons fresh basil (chopped);
  • 1 cup lemon (sliced);
  • 1 tablespoon olive oil;
  • 1 teaspoon salt;
  • 1 teaspoon black pepper;
  • 2 tablespoon mayonnaise;
  • 1 1/2 fresh spinach (chopped);

Everything else can be replaced or adapted.

  • 1 teaspoon paprika;
  • 1/2 teaspoon garlic powder;

  • 1 teaspoon garlic (minced);
  • 2 tablespoon mayonnaise;
  • 4 ounces cream cheese (softened);
  • 1/4 cup Parmesan cheese (grated);
  • 1 1/2 fresh spinach (chopped);
  • 1 teaspoon freshly chopped parsley.

  1. Preheat your oven to 375 F degrees and prepare a medium baking pan.
  2. Next, place the chicken breasts on a cutting board and drizzle with olive oil.

  1. Add 1/2 teaspoon salt, paprika, and garlic powder to a small bowl and stir them to combine. Sprinkle evenly over both sides of the chicken breasts. 
  2. Then, use a sharp knife to cut a pocket into the side of each chicken breast and set it aside.

  1. Add cream cheese, Parmesan cheese, mayonnaise, spinach, minced garlic, red pepper flakes, and remaining ½ teaspoon of salt to a small mixing bowl and stir well to combine using a spoon.
  1. Next, spoon the spinach mixture into each chicken breast evenly. Use toothpicks to hold the pockets closed, if desired.

Last but not least, remember that chicken breast is a lean protein so it can be challenging to reheat without it getting tough. Stuffed chicken is best served fresh, but it does reheat well in the oven. Just preheat oven to 325˚F, cover the stuffed chicken breasts with foil to prevent drying out, and bake for 10-15 minutes until hot.
