  • 1/2 pound mild Italian sausage (casings removed);
  • 1/2 cup mozzarella cheese (shredded);
  • 1/3 cup onion (finely chopped);
  • 1/2 teaspoon minced garlic;
  • 1 cup marinara sauce;
  • 1/2 tablespoon parsley (chopped);
  • 2 teaspoon olive oil;
  • 1/2 teaspoon dried Italian seasoning;
  • salt and pepper to taste;

Last but not least, for some extra flavor, consider pesto! These stuffed zucchini boats are great on their own, but a dash of pesto really takes them over the top.

Step-by-Step Recipe for Zucchini Stuffed with Italian Stuffing

Now, that you know what you need, it’s time to find out what you have to do. So, here is the step-by-step recipe with images:

  1. Preheat the oven to 400 degrees F and coat a large baking dish with cooking spray.
  2. Next, cut the zucchinis in half lengthwise and trim off the stem ends. Also, use a spoon to carefully scoop the flesh out of the zucchinis.

*Make sure you leave a sturdy border of zucchini flesh to support the yummy filling. 

  1. Sprinkle the Italian seasoning, salt, and pepper over the zucchini boats. Then, arrange the zucchini in the baking dish.

  1. Next, add the sausage to the saucepan and cook for 4-5 minutes, breaking up the meat with a spatula.

  1. Pour the marinara sauce into the pan and bring to a simmer; cook for 5 minutes.

  1. Now, just spoon the Italian meat mixture evenly into the zucchini boats and top with the shredded cheese.
  1. Bake for 25 minutes, or until zucchini is tender and cheese is melted and golden brown.

Last but not least, keep in mind that once cleaned properly before you prepare your zucchini boats the skin on them is perfectly ok to eat. However, some large zucchinis skin might have a bit of a bitter taste. So, always try to use small to medium-sized zucchinis.
