These White Chocolate Peppermint Brownies are quick and easy and include coffee for a peppermint mocha flavor perfect for the holidays!
I think I must be Target’s #1 fan. I’m not exaggerating when I say that I visited Target no less than five of the past seven days. It is my go-to store for shopping because I love being able to get everything I need in one place. New pajama pants, a laundry basket, a prescription pickup, and groceries for dinner? Done and done. While it can be hard to drag my 3-year-old out of the toy or card section (do your kids love looking at cards too??), it’s still easier than taking him to four different stores with four different checkout lines. Our hot spot for browsing right now is the Target Christmas section. The kids and I love looking at all the decorations, stocking stuffer doodads, and of course the candy and baking goodies. This week I found these White Chocolate Peppermint M&M’S® that are only available at Target I am feeling a little behind on my holiday baking, and these candies are a perfect way to catch up. I also found cute Glad holiday storage containers, and there was a recipe right on the back that called for the White Chocolate Peppermint M&M’S®! Clearly, I needed to buy them both. I also grabbed a bag of M&M’S® Baking Bits because they were cute (which is about all it takes to convince me) and because I was sure they would be great stirred into cookies, banana bread, or ice cream. Like I said, there’s a fab recipe on the Glad container for Black and White Peppermint Brownies, but this is me we’re talking about. It looked wonderful and pretty easy, but I wanted to make it even easier. The version I’m sharing with you here has the same flavors plus coffee, and more coffee is always better if you ask me. It only takes a few minutes to stir up a batch of these quick and easy Peppermint Mocha Brownies, and your family and friends will LOVE them! Since I baked in the M&M’S® instead of decorating the finished brownies with them, some of them did crack a bit during baking. #1 – They still tasted just as good, and #2 – That’s what powdered sugar is for. My oldest saw this dusting of sugar and said, “Oh how pretty! It looks like snow!” He did not say, “Oh, I see that you’re trying to cover up some cracked candies!” and neither will anyone else who is treated to these luscious mint chocolate brownies. Before I get to the recipe, let me just say how grateful I am for these cute Glad holiday containers. I am very un-crafty. I can’t think of cute ways to package holiday goodies, and even if I do think of something, the execution looks like the worst Pinterest fails you’ve ever seen. Having an adorable reindeer on a reusable container for giving out Christmas treats makes my life so much easier! These Glad holiday containers come in different sizes, so you’re sure to find something just right for whatever you’re making, and each size has its own recipe. We also tried these Chocolate Espresso Cookies found on the Glad holiday tall entrée containers, and they were fun, easy, and tasty! I used gluten-free cake mix and vanilla icing since we already had peppermint brownies. I did need to add an extra egg and a splash of milk to get the dough to come together, but my cake mix was 22 ounces, which I think is larger than average. I whipped up the cookies before picking up the boys, and by the time we got home, they had cooled cookies to decorate (and eat)! They were really surprised and excited about this activity. It’s nice that the cookies were so easy to make, so I didn’t have to slave away in the kitchen before we could even get to the decorating part! I hope you have fun making these too.
