You know I love margaritas. LOVE. I usually make my traditional authentic margaritas, and sometimes I like to get fancy and make blue margaritas. As long as fresh lime juice, tequila, and agave nectar are involved, I’m one happy lady.

Nothing goes better with a margarita than chips and dip, right? That’s why I’m bringing you this easy, scrumptious Fajita Chicken Cream Cheese Dip for your dipping pleasure.

This easy dip has all the tasty components of chicken fajitas plus monterey jack and cream cheese for double the cheesy goodness. It is so dang tasty! We ate it for dinner actually since it has chicken and vegetables in there. (Did you know bell peppers are a superfood?)

My husband used it to fill soft tacos instead of eating it as a dip, so that’s another option for this recipe. You could even serve it on top of a bed of rice and black beans. I’m getting hungry just thinking about all the possibilities for this chicken cheese dip. I hope you love it as much as we did!

This easy fajita chicken cheese dip goes great with organic margaritas!

Fajita Chicken Cream Cheese Dip

You’ll love this easy dip loaded with chicken, bell peppers, red onions, and cheese!

Ingredients

Units Scale
  • 1 teaspoon olive oil
  • 1 red bell pepper finely chopped
  • 1 green bell pepper finely chopped
  • 1/2 red onion finely diced
  • 1 pound boneless, skinless chicken breasts diced into small bite-sized pieces
  • 1 ounce packet fajita seasoning
  • 2 tablespoons water
  • 8 ounces brick reduced-fat cream cheese
  • 1/2 cup shredded monterey jack cheese
  • tortilla chips for dipping

Instructions

  1. Heat olive oil in a medium saucepan over medium-high heat. Add bell peppers, and saute for 5 minutes. Add onion, and saute a couple minutes longer.
  2. Stir in chicken, fajita seasoning, and water. Cook 5-7 minutes, stirring often, until chicken is cooked through.
  3. Reduce heat to medium-low, and stir in cream cheese until incorporated. Heat, stirring often, until bubbly. Stir in monterey jack cheese until melted. Serve with tortilla chips.

Notes

To make this recipe with only three minutes prep, chop the onion and chicken while the bell pepper cooks.

Wondering about doing this in the oven, or if you were to do it in the slow cooker would you still do all of the stove top steps first? I need to make it ahead of hand, and heat it up later on at a party so wondering how I could make it ahead of time and reheat with best results.

I love the “you want this” on the picture. You are so right – I WANT THIS! I think I could eat that whole bowl of dip, and would love to wash it down with one of those delicious margs! And I love that the VEEV isn’t super high in calories…that means I can eat more dip!

It’s nice enough today–If I was lucky enough to be home—for me to be
sitting on my deck with that margarita eating chips and that fabulous dip.
I wouldn’t feel guilty, because I would be gardening. Obviously we are having a lovely day in the Pacific NW.

Looks yummy and easy, which makes it perfect! My first thought was to put it into a tortilla – great minds and all that, right? :)

You are right that I’m GF, but I don’t have an actual wheat allergy and seem to be able to get away with eating or drinking trace/small amounts of wheat. This didn’t bother me, and I even sneak a bite of my kids mac and cheese or other off-limits foods now and then just to get a taste of the good stuff ;) Thank you, Angie!
