No Bake Cheesecake Bites with Chocolate Blueberries

Could these no-bake cheesecake bites be any more “me”? Here are some of my favorite things: Chocolate, cheesecake, blueberries, Target, and easy recipes. Check, check, check, check, and check. These sweet treats have it all! They require no cooking whatsoever, and they are filled with luscious Brookside Dark Chocolate Blueberries that you can only find at Target. In fact, you can get everything for this recipe at Target. If you check the Cartwheel app, you’ll find a 30% off deal on Brookside chocolates from July 12- Aug 1, 2015 or 15% off from Aug 23- Sept 19, 2015. You might find some deals for the other ingredients too.

Brookside chocolates have been around for a while, but they have some new flavors right now that you are going to want to know about. These Dark Chocolate Blueberries are one, but also look for new chocolate bars including Mango Coconut (so. good.) and Cranberry Almond. Click here to find out all the flavors. I do have to say that the new flavors were a little challenging to find, so let me give you a pro tip: Look for them on an end cap near the checkout aisles. That’s the only place I could find them in three different Target stores I checked. Only the existing products were stocked in the regular candy aisle, so check up front for the new ones.

These bite-sized treats are great to put out at a party or even to give as a gift if you can keep them cool in transit. The lightly-sweet, creamy cheesecake pairs so well with the rich chocolate blueberries. I used gluten-free graham crackers to coat mine, but you can use regular or even chocolate grahams for more cocoa flavor. These would also be great filled with the Brookside Chocolate Cranberries and rolled in cinnamon graham crumbs, especially with Fall approaching.

Instructions
  1. Use a stand or hand mixer to blend cream cheese, sugar, and vanilla until smooth. Transfer to a bowl, cover, and refrigerate for at least an hour.
  2. Use a small cookie scoop to scoop the cream cheese. Press a chocolate blueberry into the center, and use your fingers to pull cheesecake filling over the chocolate to cover.
  3. Drop the cheesecake into the graham crumbs, and roll it around to coat and shape into a ball.
  4. Place the coated cheesecake bites into a container lined with wax paper, and store in the refrigerator until ready to enjoy.
Recipe Notes

You can freeze these and thaw as many as you'd like to eat on the counter about an hour before serving.

    These might be the cutest no-bake bites we have ever seen! Love the surprise center, but we may experiment with some other treats like fresh berries or nuts. Thanks for the great idea.
