Spicy Chicken Sliders: Perfect for quick dinners or potlucks!

These Spicy Chicken Sliders are an effortless dinner that will satisfy your sandwich craving. Not crazy about spicy? Try them with pickles instead!

Spicy Chicken Sliders - These easy sandwiches are perfect for a quick dinner or potlucks!

Since Tuesday’s Meat and Potato Casserole was not exactly quick and easy, I wanted to share this super simple dinner idea with you today. It hardly even counts as cooking, but it is a really fun and tasty meal! We almost always have frozen chicken tenders in our freezer, so this is a good one to improvise when I don’t have time, energy, or ingredients on hand to make something more elaborate. Spicy Chicken Sliders - These easy sandwiches are perfect for a quick dinner or potlucks! Since these are just as good even when they’ve cooled down, they are very potluck friendly. Double or triple the recipe to take a tray to your next party, and watch them disappear!

Instructions
  1. Preheat oven to 400 degrees F. Bake chicken tenders for 15-20 minutes, turning once, until heated through and crispy. Remove chicken to a plate or cutting board.
  2. Slice dinner rolls in half, and place them open on the same cookie sheet. Carefully arrange the chicken pieces on the bottom halves of the buns (chicken will be very hot!). You will probably need to cut some of the larger chicken tenders to make them fit.
  3. Lay 1/2 slice of cheese over the chicken on each sandwich, and place a couple sliced jalapeños on top. Return to oven, and bake for about 5 minutes longer, until cheese is melted. Add spinach, tomato slices, or other desired toppings before placing the bun on top to serve. Enjoy!
Recipe Notes

If you don't like spicy food, try making these chicken sliders with cheddar cheese and sliced dill pickles instead.

Yum Andi! This looks like the perfect easy dinner and I love how you spiced it up with some jalapeños! The spicier the better. ;)

OMG these look SO GOOD! Whenever we go to a fast food place, my older boys and I will order their chicken sandwiches. These are like the homemade version! I love the jalapenos and pepper jack cheese! These would make such a great quick dinner. Love it, Andi! Pinned!

Thank you, Jen! I might make these for my boys tonight minus the spicy (which is the best part). Do you your older boys like spicy food? I love it!
