Looking for a perfect weeknight dinner? Try this Chinese Chicken Coleslaw Stir Fry!
I love bagged shredded cabbage, both in recipes and as a substitute for shredded lettuce. Cabbage is full of vitamins, and having it ready to use makes my life so easy! This simple, tasty Chinese chicken coleslaw stir fry is quick to make. You can have dinner on the table in the time it takes you to make the rice. For a shortcut, you can use the steam-in-bag frozen rice, in which case the Chinese recipe only takes about 20 minutes!
This Chinese stir fry reminds me of Chicken Mu Shu, except I served it over rice instead of with Chinese pancakes. If you are looking for a low-carb recipe, it would be just as good on its own without the rice at all. However you serve it, I’m sure you will enjoy this flavorful, easy Asian Chicken Coleslaw recipe!

Easy Chinese Chicken Coleslaw Recipe

- 1 tbsp. sesame oil
- 1 tbsp. olive oil
- 1 lb. boneless, skinless chicken diced into bite-sized pieces
- 3 tsp. soy sauce divided
- 4 green onions sliced
- 1 tsp. ginger grated
- 2 cloves garlic minced or crushed (or substitute 1/2 tsp. garlic powder)
- 1 tbsp. hoisin sauce
- 1 tsp. sriracha hot sauce optional
- 16 oz. shredded cabbage coleslaw mix
- 2 c. cooked rice
Ingredients

- Heat sesame and olive oils in a 12" skillet over medium-high heat. Add chicken and 1 tsp. soy sauce, and saute until chicken is cooked through.
- Stir in green onions, ginger, garlic, hoisin sauce, sriracha, and remaining 2 tsp. soy sauce, and cook 3 more minutes.
- Stir in coleslaw, and saute until heated through, 2-3 minutes. Serve immediately over hot rice. (Cabbage can overcook quickly, so remove from heat and serve as soon as it's done to you liking.)

This is SO GOOD. I now make it on a regular basis in my house – over rice for my teenager, and over cauliflower rice for my husband and myself. I usually increase the coleslaw, and use both a small bag of broccoli slaw and about half a bag of coleslaw. I also increase the fresh grated ginger to about a tablespoon, and my family absolutely loves this meal. So easy, so healthy, so delicious. Thanks for a winner that makes me look like a superstar in the kitchen!

Made this recipe tonight and it was a hit! I just wanted to confirm that it should be 1.6 oz of coleslaw instead of 16! I used a bag of coleslaw and found it was a good amount :)

Just made this tonight. Hubby and I loved!! Only adjustments I made were half the chicken, added some broccoli slaw to the cabbage slaw, sliced up some bell pepper and regular onion. What a versatile recipe because you can add shredded carrots, celery, pretty much whatever. This first time I made it without serving over rice or other carbs and you’re right, it can stand alone easily. But I wouldn’t hesitate to serve it over rice or noodles next time. Definitely keeping this in my stir-fry rotation. Thanks so much. :-)

This looks really good an I can’t wait to try it! I just can’t call it what you call it because my husband is convinced that he doesn’t like coleslaw regardless of the country it comes from. The funny thing about that is that he loves cabbage and brussel sprouts…so I just change the name to Chinese Chicken Cabbage Stir Fry… ;)
