Easy Weekly Dinner Menu 36 - Featuring Beef Nachos with Sriracha Cheese Sauce, Chicken Pho, Salmon Alfredo, Oven Roast Beef and LOTS MORE!

Hello there, friends! How has your week been? Mine was a bit of a doozy with PTA meetings and other distractions, so we ended up eating a spread for dinner twice (cheese, crackers, fruit, etc.) and ordering pizza once. I also tried one new recipe that was a bit of a flop, so all that did not add up to a lot of new material for your weekly dinner menu. DON’T WORRY. I still have a great weekly dinner menu full of easy dinner ideas ready for you!

I can’t even pick this time–all good. Worst part is that it’s supper time and you’ve showed me these gorgeous food pix and I have no get-up-and-go to make them. Thinking tonight is our cheese-and-cracker spread. But soon very soon I have soups to make and roasts to roast. I love the pink in your roast. Mine never look that amazing. And pan-fried catfish? Sign me up!

But, I think all I have energy for tonight (though I know your recipes are easy, quick, etc–I’m just drained enough that opening a cereal box is the most I can expect of myself) is making a negroni :-)

Hi, Liz! I completely understand what you mean about not having the energy to cook even an easy dinner. That’s why we had cheese and crackers and pizza this week! I can never just have cereal though because I love a good dinner too much to skip it. Cheese and cracker spread IS a good dinner though, and it will go perfectly with a negroni ;)

Do you have an oven safe meat thermometer? I have a digital one with a probe that stays in the meat, and I can set an alarm to go off at my desired temperature. I always use it for roasts and turkeys. That’s how I got the pink color, just baked to 145 degrees. Let me know how it goes! Thank so much for coming over!
