1 cup diced red pepper;
1 cup peeled and diced russet potatoes;
1/2 cup sweet canned corn;
10 ounces of canned tomato sauce;
2 cups of cubed chicken breast without skin;
2 tablespoons of chopped fesh parsley;
additional salt and pepper to taste.

Pour the oil into a large pot over medium-high heat. Add the onion and let it cook for 3 minutes.
