This lightly sweet Plum Coconut Mojito is perfect for summer sipping!
I think mojitos are pretty much the perfect summer sipping drink. The lime and bubbles are refreshing, and they aren’t so strong that you need a nap after drinking one. This time I added plum, which brought beautiful color, pleasant sweetness, and a signature summer taste. My oldest son LOVES plums. I can’t keep them in the house over the summer because he can eat them so fast. He has been asking me for months if we can get plums, but they are one of those fruits that you really can’t get out of season. After a long wait, we finally got our first sweet, juicy plums in the store this week! I’ve already stocked up a couple times, and we’re out again.
I’m glad I tucked one away for these beautiful coconut mojitos. Coconut rum is not very strong but adds a fun tropical flavor to this cocktail. With the sweetness from the coconut rum and plum, I didn’t need to add sugar to these. (I did include sugar as an optional ingredient in the recipe in case you like your mojitos really sweet.) Grab your muddler, and go make what might be your signature summer cocktail!
Use two wide glasses with a heavy bottom for this recipe. Place 1/2 plum, 4 lime wedges, and 4 mint leaves into each glass. Add 1 tsp. sugar to each glass if desired. Muddle to juice lime, crush plum, and bruise lime leaves. Do not pulverize the mint.
Pour 1 oz. coconut rum and 1 oz. white rum into each glass. Fill 3/4 full with ice. Top with seltzer, and gently stir. Cheers!

These mojitos are blowing my mind! Mojitos are my fav! I’ve had some various fruit versions, but NEVER plum and coconut! MUST TRY :) Pinned!

My My!! I didn’t realize I was dealing with a wild and crazy bartender. I thought you were a food blogger. Ha. I wandered around a bit and checked out some of your other drinks. I have just gotten started the last couple of years of making some cocktails and not just having wine or port or a liqueur. I like it! This is a fun one. I am going to get some coconut rum today.
