Happy (day after) Fourth of July! I hope you had a fantastic day celebrating your independence with lots of food and drink. We had a pretty low key day at home with the family, but in the end I wish we would have planned something more. What did you do with your day? Today’s cocktail was born of extra ingredients I had on hand, but this Pomegranate Coconut Mojito recipe is definitely worth shopping for on its own next time. I had leftover mint from Lemon Couscous Salad, coconut rum from the Nutty Root Beer Cocktail, and I bought pomegranate juice for another cocktail that wasn’t meant to be. All this came together to make a delicious, refreshing, not-too-sweet cocktail recipe. Cheers!Print
Roll mint leaves back and forth in your hands several times to bruise them. Place in a 12-oz. rocks glass.
Add lime juice, pomegranate juice, and rum. Fill glass 2/3 full with ice.
Top with seltzer, and gently stir with a long-handled spoon. Garnish with mint leaves if desired.
