Happy (day after) Fourth of July! I hope you had a fantastic day celebrating your independence with lots of food and drink. We had a pretty low key day at home with the family, but in the end I wish we would have planned something more. What did you do with your day? Today’s cocktail was born of extra ingredients I had on hand, but this Pomegranate Coconut Mojito recipe is definitely worth shopping for on its own next time. I had leftover mint from Lemon Couscous Salad, coconut rum from the Nutty Root Beer Cocktail, and I bought pomegranate juice for another cocktail that wasn’t meant to be. All this came together to make a delicious, refreshing, not-too-sweet cocktail recipe. Cheers!

Coconut Pom Mojito

This refreshing, not-too sweet cocktail is perfect on a hot day.

  • Total Time: 2 minutes
  • Yield: 1 1x

Ingredients

Scale
  • 6 mint leaves washed
  • 1/4 lime juiced
  • 1 1/2 ounces pomegranate juice
  • 2 ounces coconut rum
  • seltzer water
  • additional mint for garnish optional

Instructions

  1. Roll mint leaves back and forth in your hands several times to bruise them. Place in a 12-oz. rocks glass.
  2. Add lime juice, pomegranate juice, and rum. Fill glass 2/3 full with ice.
  3. Top with seltzer, and gently stir with a long-handled spoon. Garnish with mint leaves if desired.

    what a fun blend of ingredients :-) we were out of town for the 4th and visited with multiple friends and family throughout the day. And each new stop meant another drink and the last stop involved more than one. So. No mojitos for me today, no matter how amazing they look.

    Sounds like you had a delicious 4th. Some years are more exciting than others, but if you spent it with your boys, you done good!
