Learn how to cook butternut squash perfectly every time with this simple recipe. Enjoy roasted butternut squash as a simple side dish with the proposed seasonings here, or add it to fall cream soups, pasta, and more butternut squash recipes.
Ingredient List
Well, here is the simple ingredient list I already talked about. As you can see for yourself, I didn’t overreact about the simplicity of it – there are 5 ingredients. Not to mention that only 2 of them are mandatory (the butternut squash and olive oil). As for the seasonings and garlic, you can adapt them to your own taste and preferences. Sometimes, you may prefer to skip the garlic or the sugar and maybe add some cinnamon or coriander.
1 medium butternut squash;
2 tablespoon olive oil;
2 garlic cloves (minced);
1/2 tablespoon brown sugar;
1 teaspoon dried rosemary (for extra flavor);
salt and black pepper (to taste).
How to Roast Butternut Squash
If you thought the ingredient list for this roasted butternut squash recipe is simple, just look at the steps below!
First of all, preheat the oven to 400 degrees F (200 degrees C).
Peel butternut squash with a sharp vegetable peeler and cut it in half lengthwise. Then, scoop out and discard the seeds.
Cut halves into 1-inch slices, then cut slices into 1-inch cubes.
Combine butternut squash cubes, olive oil, and garlic in a large bowl and toss until well coated.
Next, add the seasonings (salt, black pepper, sugar, and rosemary).
Arrange in a single layer on a baking sheet and roast it in the preheated oven until the squash is lightly browned and tender when pierced with a fork (25 to 35 minutes).
Store leftover roasted butternut squash in an airtight container in the refrigerator for up to 5 days, not that you are likely to have them around for that long. This is such a delicious and flavored side dish I can guarantee that it will disappear very quickly! When you want to serve again, just reheat in a 350-degree oven, covered, until hot (about 15 minutes) or gently in the microwave.
