I have had so much fun creating pork recipes as a Smithfield ambassador this year, and I tried to make this last pork tenderloin recipe of 2015 my best one yet. It couldn’t be easier since it only uses three ingredients, but when the ingredients are as delicious as bacon, tender fresh pork, and teriyaki sauce, the flavor is BIG!

I used a teriyaki marinated fresh pork tenderloin in this recipe, so there was great teriyaki flavor throughout each bite. You can see how tender the meat is in the video. It seriously melts in your mouth no matter how you cook it! I hope you will add these savory, easy pork bites to your holiday party planning. Not only did I have the opportunity to enjoy Smithfield products this year, I also got to visit their Virginia headquarters, which I told you about last month. After seeing the quaint town of Smithfield and meeting so many people who take great pride in creating their quality pork products, it’s easy to see why they say they still act like a small company. To wrap up my year working with Smithfield, let’s look back at all the simple recipes I’ve shared this year using their marinated fresh pork. It has been a pleasure!

Bacon-Wrapped Teriyaki Pork Bites

  • Total Time: 30 minutes
  • Yield: 16 1x

Ingredients

Units Scale
  • 18 ounces Smithfield Teriyaki Marinated Fresh Pork Tenderloin
  • 16 ounces Smithfield bacon
  • 1 cup prepared teriyaki basting sauce

Instructions

  1. Preheat oven to 400 degrees F. Line a baking sheet with aluminum foil, and place a baking rack on top of the foil. Spray rack with cooking spray.
  2. Cut slices of bacon in half crosswise (not lengthwise!). Cut pork tenderloin into chunks about 1″ by 2″. Wrap each chunk of pork with a slice of bacon, and place pork bites seam-side down on the prepared baking rack.
  3. Use a basting brush to coat the outside of each pork bite with teriyaki sauce. Bake in preheated oven approximately 20 minutes or until outer layers are well browned.
