This week's easy weekly dinner menu features Slow Cooker Chicken Stroganoff, Kale and Quinoa Salad, Pesto-Stuffed Pork Chops, and lots more!

How has your week been? Mine has been OK, but yesterday was NUTS! In the morning, I met a friend with our little ones at a playground, and we watched a cop bust two kids for skipping school across the street. He talked to them for quite some time and made lots of phone calls, apparently calling their parents, who had to come get them! While we were watching that drama unfold, there was a really weird lady sitting on a bench right outside the playground scowling and staring at the play structure where our kids were playing, and my son started crying that he was scared of her. Before we left, a guy carrying a really heavy bag and looking suspicious cut through the park, and I wondered if he just robbed a house across the way or something. I was very ready to get the heck out of there!

Fast forward a couple hours, and we went to pick up my older son from school. We decided to go to Target (my favorite place), and what happens when we get there? A non-employee wrestles a guy on the ground for a couple minutes while the security guard stands next to them taking pictures. The guy finally got away and ran off! Not only was the wresting upsetting for my boys, seeing the bad guy get away wasn’t very comforting either!

Needless to say, I was happy to get home yesterday after all that. I had kind of forgotten about all the crime drama until my husband checked his email this morning and said their office was broken into last night! What is going on?? I am wishing you a very safe and calm weekend, my friends!

liking it all, though a salad sounds best after eating multiple pieces of my daughter’s bday cake yesterday. Was thinking I’d never eat again, but you photos (you can lighten up a deep-dish pizza? Really?) are changing my mind. Sorry about the crime wave–hope your husband’s office wasn’t damaged overly much. Scary stuff, all of it.

Yikes, Liz. Sorry I missed replying to this sooner! I somehow usually manage to only eat one piece of cake. Because I have to cut a piece and get a plate and fork, it feels like eating a whole dessert. Things like cookies, on the other hand, are dangerous to have around because I can pick one up while walking past the kitchen, and “just one” feels like a little snack (until the end of the day when I’ve walked past the kitchen a lot of times). Either way, I could stand to eat more salad for sure! Thankfully our lives have been back to the boring, crime-free usual stuff. Well, except when I got stung by a bee today, but that bee has been fully punished for its offense ;)

Wow, that does sound crazy! We were at Target a few weeks ago and we had to walk by a lady being arrested (most likely for shoplifting). It was so unsettling! I can’t imagine seeing someone wrestled to the ground like that!

I have to go check some of those recipes out. I’ve been on the look for some new things to make.

I saw a lady getting arrested when I was a kid, and I talked about it for years and still remember it (and I don’t have a very good memory). Things like that definitely make an impression, especially on kids! Thanks for stopping by, Elizabeth. I hope you found some new dinner recipes to try!
