Whip up a pot of this easy Chicken Tortellini Dinner, and make everyone happy (even the picky eaters)!

Hi everyone! Iโm Dee from Meatloaf and Melodrama, and I am super excited to be sharing this quick and easy recipe for one pot chicken and tortellini with all of you today. Iโm all about easy recipes, especially when it comes to making dinner. If I can make the entire meal in just one pan, thatโs the best! I have five kids, and after running them to and from school and various activities, the last thing I want to do is make a complicated meal. But I do want to make something that everyone will love โ even the picky eaters in the family!

The great thing about this one pot chicken and tortellini is that it tastes like you put a lot of time and effort into it, even though thatโs not the case. It actually takes a little less than 30 minutes — tops. And of course, you make it all in one pan, so there are not that many dishes to wash either โ yes! To speed things up, I like to use chicken tenders. The meat is already the right size, so I just throw it into the pan as is and cut it up into smaller pieces as it cooks. Then, I gradually add the remaining ingredients and let them all simmer together until the dish is fully cooked.
The first time I made this, it looked a little bland, so I added a few sundried tomatoes at the very end. I absolutely love the taste of sundried tomatoes, and they add a nice pop of color to just about any dish. In this case, it was the finishing touch! Itโs rich, creamy and has just the right amount of spice. Honestly, it almost tastes like one of those frozen packaged meals you can buy, just without all of the added ingredients. My family absolutely loved the chicken and tortellini, and my pasta-loving husband has even requested this for his birthday dinner. Thatโs a definite win for me! I hope it’s a hit at your house too!



One Pot Chicken Tortellini Skillet
This easy pasta dinner will be a new favorite at your house!
- Total Time: 25 minutes
- Yield: 6 1x
Ingredients
- 1 pound fresh chicken tenders
- 2 tablespoons olive oil
- 2 cloves garlic chopped
- 1 teaspoon sea salt
- 1/2 teaspoon ground pepper
- 1 tablespoon dried Italian seasoning
- 20 ounces refrigerated cheese tortellini
- 2 cups fresh spinach roughly chopped
- 1 cup water
- 1 cup heavy cream or half and half
- 2 tablespoons sundried tomatoes chopped
- 1/2 cup shredded parmesan cheese
Instructions

In a large skillet, saute the chicken and garlic in the olive oil until brown. Season with salt and pepper.

Add the water and tortellini. Cover and let cook on medium-high heat until pasta is soft (follow time guideline on package directions).

Add the spinach, cream, and Italian seasoning. Simmer until spinach is soft.

Top with sundried tomatoes and Parmesan cheese, and serve.

That’s one reason I’m excited to have contributors because they can make recipes I can’t eat ;) I can’t eat tortellini either! My kids would sure gobble this up though, and I cook gluten-rific food for them all the time.
