This shrimp scampi alfredo was our Valentine’s Day dinner. I don’t know the last time we went out to an actual restaurant on Valentine’s Day. Of course it’s harder to arrange now that we have kids, but even before we became parents, we pretty much always stayed home. I’d almost always rather have a nice dinner at home than in a crowded restaurant! This lightened up alfredo dish is so good, you will think you are in a restaurant if you dim the lights and try not to notice all the toys on the floor and fingerprints on the windows. What’s better, it is SO EASY. It only takes about 10 minutes to make once the pasta water is boiling. Try getting take out that fast! Plus, thanks to Seapak Light Shrimp Scampi, it’s way lower in fat and calories than traditional shrimp alfredo. Do you love seafood at your house as much as we do? Bring a large pot of lightly salted water to a boil. Cook pasta according to package instructions and drain.
While pasta cooks, melt butter in a large skillet over medium heat. Whisk flour into butter until smooth. Pour in milk 1/4 c. at a time, whisking constantly until smooth before adding more.
When all milk is incorporated, add frozen shrimp scampi, and reduce heat to medium. Cook 5-8 minutes, stirring and turning shrimp often. Shrimp will be pink and C-shaped when cooked through. (Be careful not to overcook!)
Turn off heat, and stir in parmesan until melted. Serve shrimp scampi alfredo over hot cooked noodles.
