This shrimp scampi alfredo was our Valentine’s Day dinner. I don’t know the last time we went out to an actual restaurant on Valentine’s Day. Of course it’s harder to arrange now that we have kids, but even before we became parents, we pretty much always stayed home. I’d almost always rather have a nice dinner at home than in a crowded restaurant! This lightened up alfredo dish is so good, you will think you are in a restaurant if you dim the lights and try not to notice all the toys on the floor and fingerprints on the windows. What’s better, it is SO EASY. It only takes about 10 minutes to make once the pasta water is boiling. Try getting take out that fast! Plus, thanks to Seapak Light Shrimp Scampi, it’s way lower in fat and calories than traditional shrimp alfredo. Do you love seafood at your house as much as we do? We love shrimp in soups, salads, pasta (obviously), and more. Fish is great on its own or in sandwiches or even burritos! I was so excited when SeaPak invited me to create a recipe because they have so many tasty products that make it easy to include seafood in your meals. This quick and easy shrimp alfredo recipe is much lighter than the traditional version and every bit as good!

  • Total Time: 15 minutes
  • Yield: 3-4 1x

Ingredients

Scale
  • 12 oz. pasta of your choice
  • 1 tbsp. butter
  • 1 tbsp. flour (all purpose, rice, or spelt flour all work)
  • 1 c. milk
  • 12 oz. package frozen SeaPak Light Shrimp Scampi
  • 2 tbsp. grated parmesan cheese

Instructions

  1. Bring a large pot of lightly salted water to a boil. Cook pasta according to package instructions and drain.
  2. While pasta cooks, melt butter in a large skillet over medium heat. Whisk flour into butter until smooth. Pour in milk 1/4 c. at a time, whisking constantly until smooth before adding more.
  3. When all milk is incorporated, add frozen shrimp scampi, and reduce heat to medium. Cook 5-8 minutes, stirring and turning shrimp often. Shrimp will be pink and C-shaped when cooked through. (Be careful not to overcook!)
  4. Turn off heat, and stir in parmesan until melted. Serve shrimp scampi alfredo over hot cooked noodles.

    wE DON’T HAVE SEPAK SHRIMP SCAMPI IN OUR AREA. SO, HOW DO I MAKE THE RECIPE FOR THE LIGHTER ALFREDO SHRIMP SCAMPI? IT IS DIFFICULT WHEN YOU USE A FROZEN PRODUCT THAT I AM UNABLE TO BUY.

      Hi, Bobbie! Sorry you can’t find that one! Frozen shrimp scampi is pretty readily available around here, so I thought it would be easy to find in most supermarkets. If you can’t find it, I would try this recipe instead. Thanks!

    My oldest is the same way – LOVES popcorn shrimp. We love shrimp in our house too (I pretty much love any seafood). I’ve never seen the shrimp scampi boxes – this looks really good!

    I’m the same way, I don’t like going out to dinner on Valentine’s Day. I’d much rather a nice evening at home. I seriously love the way you made this shrimp scampi – looks so easy and delicious!
