I told you that last weekend I went to Sacramento for a food blogging conference, where the main activity was eating and drinking. I had so much fun, but now my pants are even tighter than before! Three days of hanging out with food bloggers will do that to you, and now I need to recover! I’m back to trying to eat healthier and cut out carb calories where I can.

This brings me to today’s recipe: Check out these Waldorf Chicken Salad Lettuce Wraps! Who needs bread when you can enjoy your creamy chicken salad in a perfectly crisp romaine lettuce leaf? Of course, you should keep your lettuce leaves wrap worthy by storing it in your Rubbermaid® Freshworksâ„¢ containers. I’ve been talking up these handy storage boxes for a few months, and they really do keep delicate produce like lettuce and berries fresher longer!

This easy spin on Waldorf Chicken Salad is a perfect lunch or dinner recipe!

I made this recipe with Waldorf salad in mind, but I adjusted the classic to my taste. I’m not a raw celery fan, so I left it out. I also wanted a more even texture, so I used roasted sunflower seeds instead of walnuts. I cut the apples and grapes into very small pieces to make them more evenly distributed. I like being able to get a taste of everything in every bite. I hope you like my spin on this classic recipe!

Waldorf Chicken Salad Lettuce Wraps are a quick, easy, and light meal!

With summer still in full swing for most of the country and just about to get started in San Francisco, it’s the perfect time for a light meal like this one. You can make up a big batch of the chicken salad and enjoy it for lunches all week or have it for a family dinner. You can serve it over chopped lettuce or on buns if you prefer. You’ll love it either way!

Waldorf Chicken Salad

You’ll love this simple spin on Waldorf Chicken Salad on a sandwich or in lettuce wraps!

  • Total Time: 25 minutes

Instructions

  1. Lightly season both sides of the chicken with seasoned salt. Spray a skillet with cooking spray, and heat over medium high heat. Cook chicken in hot skillet until heated through (approximately 15 minutes). Transfer chicken to cutting board.
  2. While the chicken cooks is a great time to dice your grapes and apples. Then, use two forks to shred the cooked chicken. Use a chef’s knife to chop the shredded chicken into smaller pieces.
  3. Add chopped grapes, apple, and chicken to a medium bowl. Add mayonnaise and sunflower seeds. Stir in mayonnaise to desired consistency. Serve immediately or store in refrigerator until ready to serve.

Notes

  • All measurements are approximate. No harm will come from adding a little more or less of any ingredient.
  • Grilled, leftover, or rotisserie chicken would all work great too!

All of your additions and changes to the classic Waldorf are totally up my alley. Lettuce wraps are such a great way to enjoy chicken salad without going overboard with the bread. And I desperately want some of this chicken salad for dinner…
