This week’s menu features very fast fish tacos, monte cristo sandwiches, red beans and rice, and lots more!
Hello there! Are you excited that it’s a 3-day weekend (unless you are one of the many people who have to work this weekend, in which case I’m sorry I asked)? We’re headed to the country to hide out in the peace and quiet of the mountains. I hope it’s peaceful and quiet at least. I keep reading that it’s rattlesnake season, and our house is basically in the wilderness. Maybe we’ll do a lot of jigsaw puzzles and enjoy the wilderness through the window. Yikes!!
One thing we’ll for sure be doing is eating well. I’m sure you’re looking forward to some good meals too, so I want to share seven dinner ideas with you for your meal planning pleasure! Be sure to leave me a comment to let me know which ones you’d like to try. I love hearing from you!

Chili Lime Fish Tacos
I’m really excited to finally update this recipe because it’s a good one, but I haven’t shared it because the photos were bad. I hope you’ll check it out and give this 15-minute recipe a try!
-
Monte Cristo Sandwiches
The good thing about having contributing authors is they can share recipes with you that I might not make myself. I’m a total scaredy cat about frying things, but Amanda from The Chunky Chef brought you this classic fried sandwich recipe! It’s a great sweet and savory treat.
-
Summer Salad Recipe with Whole Grains and Chicken
I don’t have a lot to say about this recipe except that it’s good for you and tastes good. The end. I hope you like it!
-
Slow Cooker Red Beans and Rice
A friend told me she was going to make this recipe yesterday, so that made me want to add it to your menu! It’s a classic favorite around here.
-
Salmon Nachos with Black Beans
We just had these for dinner last night, and they are ALWAYS one of my favorites. They only need a total of five ingredients, and I swear they will be your new favorite too (if you like salmon).
-
Skewered Pineapple Chicken Recipe with Spicy Orange Marinade
Maybe you’re grilling for the holiday weekend. If so, these kebabs would be a great addition to your BBQ. (You can also make them in the oven!)
-
Tilapia Sandwiches with Spicy Mayo
Am I giving you too much seafood this week? We have been eating a lot of fish lately! I love these sandwiches, and you can’t beat how quick they are to make. If you don’t want to use fish, try making the same recipe but with thin-sliced chicken breasts instead!
