This dinner menu full of easy recipes includes Cheesesteak Rice Bowls, Slow Cooker Mexican Rice and Beans, Italian Chicken Potato Skins, and lots more!

Woo doggie! What a week! I didn’t tell you that my little kid woke up with a stomach bug Thursday night because puking stories are hardly ever appetizing. I left out that gem in last week’s dinner menu, but when my big kid woke up sick this Thursday night, exactly one week later, well that’s just too much not to share. I hope you forgive me for being a little behind this week. I’m just trying to keep up with the laundry and requests for bubbly water and saltines around here!

I did take a break Friday morning to complete my hair saga that I told you about, which has also set me back in my schedule. The keratin seems to have worked wonders so far, and my hair is silky smooth now instead of fried and crazy. Yay for that. It’s also pretty blonde, which is a definite new thing for me. Want a photo? Maybe I’ll put one on Instagram next week when I haven’t been up all night with sick kids. I’m looking far from my best right now.

Last night I was on the search for a super easy but satisfying meal. (Wait, isn’t that every night?) We had steak marinated in Moore’s Original Marinade. They generously sent me samples of all their flavors recently, and I’m working my way through them. I’m very pleased so far, and you can’t beat the ease of having your marinade ready to go right out of the bottle! We paired the steaks with roasted vegetables and couscous for a tasty meal. Hopefully this weekend we’ll all be well, and I’ll be ready to get started on some new recipes for you. In the meantime, here are seven tasty dinner ideas for the week ahead!

Oh no, hope your lil guy is feeling better. Love this week’s dinner menu! The rice and beans and hasselback chicken would be perfect for Cinco de Mayo! I’d love to see your pretty blonde hair too :)

Thank you! I’m still working out the kinks (so to speak) of my new hair. I don’t know what to do with it! I’ll share a pic when I think it looks somewhat presentable ;)
