This shrimp scampi alfredo was our Valentine’s Day dinner. I don’t know the last time we went out to an actual restaurant on Valentine’s Day. Of course it’s harder to arrange now that we have kids, but even before we became parents, we pretty much always stayed home. I’d almost always rather have a nice dinner at home than in a crowded restaurant! This lightened up alfredo dish is so good, you will think you are in a restaurant if you dim the lights and try not to notice all the toys on the floor and fingerprints on the windows. What’s better, it is SO EASY. It only takes about 10 minutes to make once the pasta water is boiling. Try getting take out that fast!
