Hello, my friends! It’s Friday already, so are you ready to think about planning your meals and grocery list for the coming week? I hope so because your new meal plan is ready! I also have a new quick fix meal for you! Quick fixes are meals I throw together without a recipe but are worth sharing. These are dinner ideas to remember when you run into the grocery store thinking “I need food for dinner but have no clue what to make.” Or, sometimes they are meals that I can make without a trip to the store because I have all the ingredients already. Here’s a new one for you:

Low Carb Taco Salad: We enjoyed this super easy dinner last night, and I thought I would pass it on. I bought pre-seasoned, uncooked chicken breasts from Trader Joe’s. They were seasoned with Mexican flavors, so I just cooked those in a hot skillet and diced the meat. Then, I served the chicken over finely shredded cabbage (from a bag), diced tomatoes, a few corn chips (optional), sour cream, salsa, and a little shredded Mexican cheese. You could also add avocado, black beans, or rice if you prefer. We liked this a lot because it was a nice, light way to get the flavor of a burrito or nachos without so many calories.

Chuck E. Cheese Yuck! I will be thinking of you. Every time we had a party there I just dreaded it because of the noise and it seemed no one watched their children. Have fun!
